CHOCOLATE BROWNIES (29)

350g (12oz) butter


140g (5oz) unsweetened cocoa powder
6 eggs
675g (1lb 8oz) caster sugar
250g (9oz) plain flour
3 tsp real vanilla essence
100g (3 1/2 oz) shelled fresh walnuts, roughly chopped

Preheat the oven to 180C/350F/gas mark 4 and line a fairly deep baking tray,
about 20x30cm (8x12in), with greaseproof paper. In a large, heavy pan, melt
the butter with the cocoa. Whisk the eggs, then whisk in the sugar, then the
flour and vanilla. Finally, add the cocoa and butter mixture, and the nuts. Pour
into the prepared tray and bake for 40-45 minutes, or until springy to the touch.
Do not overcook, or you'll loose the fudginess. Cut into squares while warm
and leave to cool.
