CHOCOLATE CHIP MUFFINS (31)

12 Baking, Cakes

225g (8oz) self raising flour


100g (4oz) self raising wholemeal flour
1/2 tsp baking powder
1 banana, mashed
75g (3oz) brown sugar
2 eggs, beaten
300ml (1/2 pint) fresh milk
75ml (3oz) butter, melted
100g (4oz) chocolate chips

Heat oven to170C/340F, gas mark 3.


Sieve flours and baking powder.
Mix banana and sugar until smooth, add the eggs, milk and butter.
Stir into dry ingredients with the chocolate chips.
Spoon into 12 greased muffin tins.
Bake for 20 minutes. Cool on a wire rack.
