There were no recipes entered last month so I am
sharing one that I found (see page 2). The contest
is open once again but slightly different this time.
Here are the rules: Entries can be a family recipe, a
recipe from a cookbook (please tell us your
source), newly made up recipes, etc. but cannot
already appear on the main Alisons Pantry
website or on any of my newsletters. All entries
must include boneless, skinless chicken breasts
plus at least one other ingredient that appears in
catalog #9. Next to the ingredient(s) that appears
in catalog #9, please include the page number and
item number. One recipe will be chosen to be in
next months newsletter, and the person who
submitted the recipe will receive a 4lb bag of
Foster Farms Chicken Breasts (catalog #9, page 8,
#5513) for FREE! See page 2 of this newsletter for
my example. Photos are not required with your
entry.

Chicken Peanut Kabobs

20 bamboo or wooden skewers (6-inch)
10 slices bacon (page 3, #3297)
4 boneless skinless chicken breasts (page 8, #5513)
cup peanut butter (page 21, #2913)
cup soy sauce
cup apple juice or water
to teaspoon crushed red pepper flakes (page 28, #5570)

Steps:
1. Soak skewers in water 15 minutes. Meanwhile, cut each bacon
slice into 4 pieces; cook in 10-inch nonstick skillet over medium
heat about 5 minutes or until partially cooked but not crisp.
Remove bacon from skillet; drain on paper towels.
2. Cut each chicken breast lengthwise into 5 strips, each about
inch thick. Cut each strip into 3 pieces. Alternately thread 3
chicken pieces and 2 cooked bacon pieces onto each skewer;
place on broiler pan.
3. In a small bowl, mix all remaining ingredients until well blended.
Pour half of sauce mixture into mall serving bowl; set aside until
serving time.
4. Brush about half of remaining sauce evenly over kabobs. Broil
kabobs 4 to 6 inches from heat 3 to 4 minutes. Brush remaining
sauce over kabobs; turn kabobs. Broil 3 to 4 minutes longer or
until chicken is no longer pink in center. Serve with reserved
sauce.
