Christmas party
December 13, 2014
The 2014 Christmas party of the
Rocky Mountain Revelers was held at
the usual place, Westminster Elks
Club. I hope everyone enjoyed the
great food. I know I did.
I want to thank the Board for
helping, but especially for the help I
received from Anita, Robert and
Linda. Also, thank you Bob & Annie
for making the arrangements with
the Elks. It was great to see
everyone, and enjoy a fun white
elephant exchange. I hope everyone
had a fun time.

The Trinity United Methodist Church is the oldest congregation in Denver.


It is still in operation and has been since 1859. You have probably seen
this iconic building as youve driven down Broadway, and the structure is
truly stunning. It was designed by Colorados first licensed architect,
Robert Roeschlaub, and is the perfect example of the Gothic Revival
architectural style. It is built completely out of rhyolite brought in from
Castle Rock and includes a huge stained glass window by the renowned
Tiffany Company.

A Word from the President

Well the New Year is here! Are you excited? The 2014 camping season was
enjoyable, but 2015 will be especially fun. Im looking forward to 2015, but
first we have to get through the winter months. The luncheons in January,
February & March will be a good time to catch up with those of us who are
still in Colorado and havent left for the warmer climate of Arizona.

Hopefully everyone had a good holiday season. I really enjoyed the Christmas
party. The white elephant exchange was a lot of fun. The days are getting
longer and the snow is falling. We even had a white Christmas this year!

I want to thank everyone on the Board for all their hard work this year. I also
want to thank everyone in the club for the support you have given me in my
first year as President. I will continue to serve another year as President with
your help. If there is anything that I need to do, just let me know.

Next year, Colorado will be hosting the National Campvention in Gillette,


Wyoming. Be sure to pre-register for it. The dates are July 6 to 10, 2015. It
promises to be a fun time. Gillette is only 350 miles north of Denver. As with
previous campventions, there will be seminars, silent auctions, a red hat
luncheon for the ladies and lots of entertainment. Put it on your calendar and
plan to attend!

White Chicken Chili

Humor

3 tablespoons olive oil


1 sweet onion, diced small
1 - 2 stalks celery, diced small
1 green bell pepper, seeded and diced small
1 jalapeno pepper, seeded and minced
1 (4 ounce) can fire-roasted green chiles
3 - 4 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground chili powder
1/4 teaspoon cayenne, plus more to taste
6 cups chicken stock
2 (15.8 ounce) cans white beans, such as Great Northern or
Cannellini
2 cups fresh or frozen yellow corn (thawed if frozen)
4 cups cooked, shredded chicken (or turkey)
1 1/2 teaspoons Tabasco sauce
6 tablespoons unsalted butter
6 tablespoons all-purpose flour
3/4 cup whole milk (or heavy cream)
Kosher salt and freshly ground black pepper, to taste
Sour cream and grated cheddar, for serving
Heat olive oil in a large heavy stock pot or Dutch oven over medium
heat. Add the onion, celery, bell pepper, and jalapeno and cook until
very soft, about 8 - 10 minutes. Add the green chiles, garlic, cumin,
chili powder, and cayenne; saut for an additional minute or two. Pour
in the chicken stock and bring to a boil. Add the white beans, corn,
chicken, Tabasco, and a generous amount of salt and pepper. Reduce
the heat to low and simmer for about an hour. Melt the butter in a
heavy sauce pan over medium heat. Whisk in the flour and cook the
roux for 1-2 minutes. Pour in the milk and continue whisking until a
thick paste forms, about 2-3 more minutes. Stir the paste into the
chili until it is completely incorporated and there are no lumps.
Continue cooking the chili over low heat, stirring occasionally, for
another 45 minutes to an hour. Season to taste, using a generous
hand, with additional salt, black pepper, and cayenne.
Serve chili with sour cream, freshly grated cheddar, and additional
hot sauce on the side.
