Not much information exists about the history of tarte
aux pommes, because it is such a common recipe,
and has been around for a long time.
However, tarte aux pommes has given birth to
another classic French recipe: tarte tatin.
The story of tarte tatin goes like this: In the late
1800s, there was a hotel. The cook was Stphanie
Tatin, whos specialty was tarte aux pommes. One
day, Stphanie was working quickly, and forgot to put
the crust in the pan before putting in the apples. She
put the apples in fi rst and put the crust on top, and
decided to bake it anyway. When it came out of the
oven, she turned it upside down on a plate, exposing
the apples, and tarte tatin was made!

-1 pate feuillete ou sable de 250 g
-1 citron
-1 oeuf
-60 g de beurre
