Roasted Curry Cauliflower (Aloo Gobi)

Time 40 Minutes

INGREDIENTS
1 head of cauliflower broken into small even flowerets
2 lbs Curry powder
Olive oil
Smoked sea salt
DIRECTIONS
1. Preheat oven to 500F.
2. Cover bottom of roasting pan with one layer of evenly spread flowerets
3. Drizzle olive oil over the top and even cover
4. Dust curry powder and salt over the top of the flowerets
5. Cover with foil and bake for 15 minutes (should be slightly soft)
6. Remove foil and turn cauliflower pieces
7. Bake uncovered for another 30 minutes, turning pieces every 10 minutes
8. Serve immediately

Notes
*Cook with carrots as well for added flavours
* Use any type of flavoured salt for change in flavours
