Greek Salad

Ingredients :
• 2 large or 3 small vine-ripened tomatoes
• 1 green pepper (capsicum)
• 1 Lebanese cucumber
• 260 g (8 oz) feta cheese
• 1 small red (Spanish) onion, thinly sliced, optional
• 1/3 cup (g/2 oz) Kalamata olives
• 2-3 tablespoon lemon juice
• 3-4 tablespoon olive oil

Steps :
• Carefully remove the small core from the top of each tomato. Cut each
tomato into about 8 wedges.
• Cut the pepper in half and remove the seeds and membrane. Cut the flesh
into small squares.
• Cut the cucumber in half lengthways and then into slices.
• Cut the fetta cheese into small cubes.
• Combine the tomato, pepper, cucumber, onion (if using), cheese and
olives in a large bowl. Drizzle with the lemon juice and oil. Sprinkle with
salt and freshly ground pepper. Stir gently to mix, then serve
