Bomb cake - BOMBA TORTA

Dough:

7 egg yolks mix with 7 spoons of sugar and with a


whip of 7 egg whites. After that add 7 spoons of grounded walnuts, 1 ½ spoons of flour
and a little bit of baking powder. Bake at medium temperature.

I cream:

250g of butter or margarine


250g sugar powder
6 egg yolks
150g grounded walnuts
150g biscuits "petite beure"
2 dl orange juice

Mix the butter with sugar powder so it becomes foamy and then add one by one egg
yolks. After that you should add walnuts and biscuits. Add a part of orange juice until the
density is fine.

II cream:

6 egg whites
150 g sugar + 6 spoons of sugar

Whip egg whites until it is hard and then add 150g of sugar and mix till it is homogenous.
In separate pot make a caramel of 6 spoons of sugar (just put in the pot and warm up until
sugar becomes brownish) and add slowly produced caramel in the mixture. The mixer
should be on hi power while adding caramel. Mix until all caramel is dissolved.

Arrangement:

Put the dough first and imbue it with the orange juice. Put cream I on top of it (all
around) and the cream II on top of cream I. Use fork to make decorative look. Serve
cold!
