Porc Avec Aubergines

Groundnut oil 125ml


Pork fillets 4-6
Plain flour mixed with salt 60g
Water 40ml
Spices of your choice
Paprika 5g
Medium aubergines 4
Fresh apples diced 2
Method

1. Heat the oil in a heavy based pan.


2. Coat the pork with the combined flour and salt, and sauté in the oil until golden.
3. Add the water, spices and paprika and simmer on low heat until the meat is tender.
4. Stir in the aubergine and apple and cook for abut 20 minutes or until everything is
cooked and the sauce has thickened.
5. Serve hot with rice, mashed yams or potatoes.

From the area of Martinique and Guadeloupe this traditional west African dish regularly
sees the combination of pork and aubergines. Adding apples creates an even more unusual
flavour and the dish can be spiced to suit your personal taste buds.
