Chicken Tortilla Soup

Ingredients:

 2 cups chicken broth


 1 can cream of chicken soup
 1 can reduced sodium black beans- rinsed and drained
 1 small package taco seasoning
 1 can mild Rotel
 1 small can corn
 1/2 cup cooked rice (optional)
 Shredded Mexican cheese
 Tortilla strips 
 1 roasted chicken from the grocery store

Directions: 

 Remove skin from chicken and shred the meat.


 Mix all ingredients except cheese and tortilla strips in a pot on the
stove and simmer.
 Serve in bowls and top with shredded cheese and tortilla strips. 
Mexican Crockpot Casserole

Ingredients:

 1 1/2 lbs ground beef OR ground turkey


 1 onion, chopped
 1-2 teaspoons crushed garlic
 1/2 teaspoon salt
 1/2 teaspoon pepper
 6 corn tortillas
 1 jar Pace mild picante sauce
 1 can reduced sodium black beans, drained
 Taco seasoning
 1 can mild enchilada sauce 
 2 cups shredded Mexican cheese

Directions:

 Add chopped onion, salt, pepper, and garlic to ground beef or turkey
and brown.
 When meat is browned add taco seasoning, follow directions on
package.
 Pour a small amount of enchilada sauce in the bottom of the crockpot
and spread around.
 Place two corn tortillas in the bottom of the crockpot.
 Place a third of the following in layers over the tortillas; meat,
enchilada sauce, beans, picante sauce, and cheese.
 Repeat layers two more times or until ingredients are gone.
 Sprinkle cheese on top of casserole.
 Cover and cook on low 6 hrs.
