WATER CONCENTRATION AND TEXTURE

-THREE LAYERS TEA -

INGREDIENTS
30ml Palm Syrup 70ml Evaporated Filled Milk 10g Sabah Tea Leaves 30ml Hot Water Ice cubes

INSTRUCTION
Soak Sabah tea leaves into a hot water cup. Leave it aside for 15 min. Pour Palm Syrup Put iced cube up to the brim. Pour in Evaporated Filled Milk. Gently pour in Sabah tea prepared earlier. The tea should remain above the layer of Evaporated Filled Milk. A 3 Layer of separation will appear. Serve chilled.

How the three layers formed?

Density of liquid layers


Water : 1g/mL Evaporated milk : 1.1g/mL Palm syrup : 1.38g/mL Ice cube : 0.92g/mL Some liquids can not be mixed, so they separate based on their destiny. ice cube is less dense then the water so it will float on the top. empty spaces within the ice structure, translates to an expanded structure. Thus, ice takes up more volume than the liquid water molecules. hence ice is less dense than liquid water. More dense liquids, palm syrup,sink to the bottom. Followed by evaporated milk, water and last ice cube.

Concentration of liquids
More concentrated liquid become heavier and settle at the bottom Palm syrup is the most concentrated It contained the largest amount of sugar Thus, water composition within palm sugar is the lowest Then, followed by evaporated milk Lastly, tea solution. Tea solution did not contain sugar. This make the liquid to be the lightest one. The amount of sugar dissolved in a liquid also affects its density Palm sugar resist mixing with other because it is thick and viscous

Different Temperature
when temperature , the molecules of water are packed more closely together, therefore the density of water

As temperatures , the molecules move away from each other, therefore the density is
The density of water and evaporated milk are very close with each other. Thus, ice cubes are added to help to lower the temperature.
