Recipe Ingredients
Brinjal 250g Onions 250g (Medium size : 2 nos) Tomatoes 250g (Medium size : 2 nos) Oil 125 ml (8 tbsp) Coconut paste 50g (3 tbsp) Tamarind juice 15ml (1 tbsp) (Extracted from 20g tamarind soaked in 40 ml water) Optional : Tamarind pulp 15ml ( 1 tbsp) (Mix 5 ml (1 tsp) pulp in 10 ml water) Mustard seeds 1 tsp (5g) Methi seeds 1 tsp (5g) Urad dhal - 1 tsp (5g) Dried red chillies 7-8 Curry leaves 10 -12 Water 1000 ml Aachi Ginger Garlic Paste 25g ( 1 tbsp) Aachi Kulambu Chilli powder 50g
Preparation Method
1) Heat oil in a cooking pan (kadai) and splutter mustard seeds. 2) Then add methi seeds, urad dhal, dried red chillies, curry leaves and fry for a minute. 3) Add chopped onions and fry till golden brown. 4) Add Aachi Ginger Garlic Paste and saute for 2 minutes. 5) Add chopped tomatoes and fry till raw odour goes off.
6) Now add Aachi Kulambu Chilli Powder and cook well with the ingredients. 7) Add water, stir well, then add brinjal and cook till it becomes tender. 8) Now add tamarind juice and allow to boil for sometime. 9) Finally add coconut paste and cook till the gravy thickens. 10) Spicy Karakulambu is ready-to-serve.
