Tamarind
is the fruit of Tamarindus indica popularly used in Indian cuisine. Roasted tamarind seeds are a
popular snack amongst the rural population. Mostly available during dry season, tamarind seeds
contain phosphorus, magnesium, vitamin c, potassium, calcium and amino acids. Tamarind seeds
are shiny black in colour and have numerous nutritional and health benefits.22

powder twice a day with water to boost joint lubrication which soothes pain.

Ackee
The seed grows into tall /small tree that bears large red and yellow fruit 7.5 10 cm
(3-4 in.) long. When ripe these fruits burst into sections revealing shiny black round
seeds on top of a yellow aril which is partially edible.
Uses

Jamaica is the only place where the fruit is widely eaten. However, it has been introduced into
most of the other Caribbean islands (for example, Trinidad, Grenada, Antigua and Barbados),
Central America and Florida, where it is known by different names and does not thrive in
economic quantities. Jamaican canned ackee is now exported and sold in markets patronized by
expatriate Jamaicans.
Ackee is a very delicious fruit and when boiled and cooked with seasoning and salt fish or salt
pork, it is considered one of Jamaicas greatest delicacies.

Ackee contains a poison (hypoglcin) which is dissipated when it is properly

nutritious snack. Pumpkin seeds are flat and dark-green and some may be encased in a yellowwhite husk. Pumpkin seed is rich in vitamin A C and E. It has Zinc and Amino acids.
Uses
Good for pain, kidney stones, urinary burning, swollen knees and ankles, fever, diarrhoea, heal
wounds, worm infestation, helps arthritis, good source of iron copper protein and zinc. Pumpkin

Corn
Corn seeds are called kernels. Kernels are the seed on the cob or stick Corn comes from a leafy
stalk which produces ears which contains seeds { kernels}.

Uses
Used to make asham, pudding, bread, and dumpling. It can be boiled or roasted. From corn we
get cornmeal, vegetable oil and starch. Corn can be grated to make porridge.
