intolerances; wheat or dairy for instance, and who need to have meals
without the ingredients that are problematic for them. Or others who
have to limit their sugar or salt intake. Or there are others who just
really hate garlic or onions and have difficulty finding ready meals that
they can eat.

Bank Manager:

So you and your sister recommend ready meals that these people can go
out and buy?

Paula Davies:

No, not really. Its a bit more than that. We dont just plan their meals
for them, we cook the food ourselves and deliver to the customers
home or workplace. We begin with a consultation where we discuss
their particular problem and then we work out a programme that suits
them the best. Sometimes we make food that is designed to be heated up
and eaten immediately or we cook food that is going to be frozen and
eaten later.

Bank Manager:

It sounds interesting. Do either of you have any relevant qualifications?

Paula Davies:

Yes, we both do. Im a qualified dietician and my sister is a chef, with a


specialisation in food allergies.

Bank Manager:

Well, leave your proposal with me and Ill get back to you by the end of
the week. It looks like a very promising enterprise and Im reasonably
certain well be able to help you with your start-up costs.

Paula Davies:

I wanted to send you a quick email to let you know that I arrived in Crete safely I took the overnight ferry
from Athens because it was more economical than even the low cost airlines and that my hosts are really
nice.
I know that you were worried about me going to stay in a strange place with people that Id never met before,
but I feel as if Ive known Eleni for ages. Not only have we spoken on the phone several times, but weve also
been in touch by Skype, and Ive seen her house and her parents.
Even though Elenis a student like me, she lives much nearer home than I do, in a studio flat upstairs from her
parents place. She can be independent if she wants to theres a proper kitchen and bathroom and
everything, and a separate entrance but I think her family is very close and she really only uses the studio to
study and get away from her younger brothers and sisters. Its quite big big enough for me, too and its
only about twenty metres away from the sea! Theres a really big balcony with an amazing view and Eleni
says that if its hot, we can sleep out there and listen to the sea.

Her parents are really nice and they came down to the port with Eleni to pick me up from the boat, even
though I told them I could make my own way to their house. We all had dinner together fresh fish and salad
from their garden and then Eleni took me to an open-air club she and her friends go to. Im staying tonight
and tomorrow night too, and then Im moving on to the next town. I hope my hosts there are just as nice. Its
funny because Elenis dad made me promise to text them when I get there and they said that if I have any
problems, I can call them and theyll come and pick me up.
So, you see, you dont have to worry about me at all. I hope you dont mind but Ive invited Eleni to come
and stay with us at the end of the summer before classes start again. Her family were worried too about her
staying with strangers, but now she doesnt have to because shes got me.

You recently read about an online company, Hosts International, that offers a service that is similar to the idea
of couch surfing. You pay them a small fee, send them your itinerary and they then arrange your
accommodation. You dont have to pay anything else. They promise to match guests and hosts carefully,
according to everyones requirements. They also promise to respond immediately online if their customers
have any problems with the hosts. You have just returned from a trip they organised for you but you are not
satisfied for the following reasons. In one place you were sent to stay with a retired couple who locked the
door at ten oclock at night and refused to give you a key. In a second place, which was dirty and
overcrowded with students, the hosts would only let you stay if you paid them 30 euros a night. When you
tried to contact Hosts International to find you another host, nobody replied and you had to go and stay in a
hotel, which although clean, cost you 50 euros per night.
