Cook in Rio

The best of Brazilian cuisine in a four-hour cooking and eating experience!

You may not have heard of batida de coco, aipim frito, moqueca or brigadeiro. But ask a Brazilian and
theyll explode about how flavorful and delicious they are. And with good reason: they are some of Brazil
s favorite foods and drinks that involve less-than-ordinary ingredients, such as cassava, sugar cane
molasses, cashew fruit (not the nut) and dend palm oil.

Cook in Rio, Rio de Janeiros first and only English-taught cooking class, has been delighting
international travelers since 2009. It works a little something like this: the class starts out with a bang, as
classic caipirinha drinks are made and served along with two starter dishes: flambed sausage with onions
and fried-cassava sticks with pepper jam. Then comes the main event which, depending on the class,
highlights the Bahian-born seafood dish moqueca or the pork & beans stew feijoada. The class ends
sweet with the brigadeiro: a chocolaty caramel cupcake-like treat, a Brazilian favorite.
Lessons occur daily in Copacabana at 4pm with up to 10 participants. Each class lasts about 4 hours.

Simone Almeida, the instructor, is the quintessential Carioca, a Portuguese term used to describe
someone who is from Rio de Janeiro. Her warm and funny manner, along with her experience and
knowledge of Brazilian cuisine, is one of the main reasons for Cook in Rios success.
We get everyone involved in the preparations and cooking, so everyone has fun. She adds. Plus we
explain the origins of the recipes, as some are culturally and historically interesting.
