CLIMATE
Theclimateofthe2016vintagewascharacterizedbyabundantspringrainfallandbyhigh
summertemperatureswithexcellenttemperatureswingsbetweendaytimeheatandevening
andnighttimecoolness.Thespringrainsslowedthefloweringofthegrapebunchesandthe
growthanddevelopmentofthecropaswell.Thefavorablesummerweather,instead,brought
vinegrowthandgraperipeningbackintobalance,conservingthearomaticpatrimonyofthe
grapesaswell.
Sugarlevelwereatnormallevels,whileaciditywashigherthanaverage.
PickingbeganduringthelastweekofthemonthofAugust.
WINEMAKING
Theharvestedgrapesweredestemmedandgivenaverysoftpressing.Themustwasthen
chilledtoatemperatureof50Fahrenheit(10centigrade)tofavoranatural,staticsettlingof
impurities.After48hoursitwentintostainlesssteeltanks,whereitfermentedat
temperaturesheldtoamaximumof59Fahrenheit(15centigrade).Thepreparationinsmall
batchesjustbeforebottlingassistedthewineinmaintainingfreshnessandfragrance.
Alcoholbyvolume:11,5%vol.
HISTORY
CipressetowasgiventhisnamewhichrecallsthecypresstreeswhichdottheTuscan
landscapein1998tounderlineitsTuscancharacterandwasoneofthefirstroswinesto
beproducedinItaly.Todayitisawinecloselytiedtothevineyardswhichsupplyitsgrapes
and,assuch,reflectsaproductionphilosophybasedonqualityateverylevelofprice.The
wine,infact,isaconcreteexampleofhowfinequalitycanbeachievedalongwithexcellent
valuetoconsumersandwinelovers.
Tastingnotes:
Atenuouspinkincolor,thewineshowsintensefruityandfloralaromaswhichrecallpeaches
andwhiteflowers.Theflavorsarebalanced,fragrant,andsavoryintheirminerallaced
crispness.Thefinishandaftertasterecallthefruitinessofthenose.
