Atsarang Papaya

Pickled Green Papaya

Ingredients:

1 kg Green Papaya shredded

500 g Light Brown Sugar

500 mL White Vinegar

50 g Green String Beans (1 inch sizes)

50 g Black Raisins

2 Tbsp Ginger julienned

3 pcs Garlic Cloves sliced

1 pc Red Onion medium sliced

1 pc Carrot julienned and flower shaped

1 pc Red & Green Bell Pepper julienned

Procedure:

1. In a large wok put in vinegar and sugar, stir until sugar dissolves; then heat it to a boil.

2. While the mixture starts boiling, put onion, garlic and ginger.

3. After the onion changes color, put carrots and string beans.

4. Until the string beans changes color, add the red and green bell peppers and black raisins. And

stop the heat.

5. Finally add the green papaya and mix until it coats them. Set aside and cool them.

6. Transfer it into individual jars.
