Lima is located in the coastal desert of Peru , at the foot of the western slope of the central Andes
of Peru . Although it was initially founded on the Rimac River valley , now it extends over vast
desert areas and even on other valleys . While the main square is located at an altitude of 161
meters, the Lurigancho-Chosica reaches 950 msnm.56
Runs along the coast from km 50 of the Panamerican Highway , at the height of Ancón District on
the border with the province of Huaral , to the district of Pucusana to the height of km 70 of the
Panamericana Sur , on the border of the province Canete . What makes an area of just over 130
km of coastline and beach. To the east it extends to about 50 km of the main highway in the
Lurigancho-Chosica , bordering the province of Huarochiri .

-The procession of the Lord of Miracles: This is a tradition that is only done in Lima, during the
month of October, is purely Peruvian . All devotees of the saint come to a grand procession that
takes place several streets of this city. This is considered the largest worldwide tradition . A group
of men carry the image of the Lord of Miracles across the street while everyone walking behind
her devotees singing and praying .
Anticuchos : Typical dish of Lima. Visitors can not leave the country without ever having tasted a
portion . It is made with skewered beef heart, macerated in red pepper sauce and vinegar, and
then fry on the grill. It is served with boiled potatoes and chili.
Aji de gallina : This delicious dish is spicy chicken based , cheese , milk, nuts and pepper .
Lomo saltado : This delicious dish is prepared with beef tenderloin , tomato , onion and pepper. It
served with fries and rice.
Carapulcra : Lima stew Exquisite cuisine. This is prepared with dried potato casserole style with
pork and chicken meat , red pepper sauce , garlic and peanuts.
Cau -cau : The preparation is with tripe , potatoes , stick and mint.

2 pounds FRESH white-fleshed skinless fish fillets such as seabass, sole,
cod, or corvina

Instructions:
2. Soak the fish cubes in lightly salted water for 1 hour to tenderize. Drain well.
3. Put the fish in a bowl and fold in the lime juice carefully. Add the salt, garlic, aji chombo,
cilantro, onion, celery and refrigerate for 24 hours.
4. To serve, line a bowl or large platter with the lettuce. Place the ceviche in the center and garnish
with the cherry tomatoes, if using.
The Lima culture is an archaeological culture of ancient Peru that developed in the Central Coast,
in the current eponymous department , between 100 and 650 of the Christian era , during the
Early Intermediate Period and early Middle Horizon . It is contemporary with the Moche , Nazca ,
Recuay and Huarpa cultures. It is known to the Lima culture for its colorful pottery and sculptural
representations of serpentine beings intertwined and fish. Also for its buildings made with small
handmade adobes and its fine polychrome pottery decorated with geometric motifs.
