1. Background of the Study

Milk tea is now one of the most popular trends in the food and beverage

industry. People go crazy over milk tea because of its low price, refreshing

taste, health benefits and the store’s ambiance. (Raymundo, 2012) With the

increasing demand of milk tea, lots of entrepreneurs put up tea house

everywhere.

In Taiwan milktea called as “Bubble Milktea” and also known as “Boba

Milktea”. In India, Hong Kong and Taiwan also have a Milktea with different

features. British and Dutch replaced the Indian Spices with different teas and

Maple sugar and these became the basic formula of their milktea. While,

Dutch people use milk to atleast lessen the bitter taste of the brewed tea.

Milktea has travelled across the world and now almost invading our country.

We choose milktea because this is popular in our country and even in our

place. It is a great product for the consumer most likely those who are into the

milktea craze.

The researchers choose Milktea to be their product because of its trend

and demand to the market. It is very trend in the Philippines that’s why the

researchers choose to innovate and have the new version of milktea.

Innovating this product can be tested through having survey that researcher

will assess the answers of the respondent’s choice.

Some study says that tea is good for health because it has a full
antioxidants called “catechins” it’s either it’s black tea, green tea, etc. in a

previous study it showed that drinking tea can improve blood flow compared

when you drink plain water. However, when the milk added to the tea it

showed that it’s fully blocked the antioxidant that benefits to improved blood

flow. In fact, milktea become popular to Filipinos because of its different shade

and taste of milk in tea. From the recent study they claim that it is a new kind

of refreshment. However, milktea can be also feasible because in the first

place this product have fruits as an ingredient that makes it more delicious

and healthier. What researcher needs to do is to maintain the original taste of

milktea even it has a combination of fruit flavor. This product is also feasible

for the old people not just for the teenagers.

2. Statement of the Problem

This study is conducted to develop milktea wherein the researchers will use

fruits as flavor to serve much healthier drink in the market.

The following are the visible problems of the project study

This study aims to produce milktea where in fruits will be used as a new set

of flavor. This also aims to give a product to the market that is healthy but still

delicious for the people

Today’s beverages are so unhealthy for some teenager that loves to drink,

we all know that if we let this unhealthy routine we may get severe sickness

because of a simple product. That’s why the researchers come up with a

simple product and assuring that those customers who like flavoured

beverages are not harmful while they are taking our product. This product will

assure that all the consumers will be satisfy, this study will beneficial with

students, children, and even adults will loved our own product. The said

product can be consume by all people because it was made healthier than the

usual one and it is very affordable that anyone can buy it.

6.Scope and Delimitation

The scope of the study focus on feasibility and viability of milktea with fruit

flavor. The researchers conducted their study at Binan Intergrated National

Highschool. The exact number of respondents are 367 students..

HEALTH BENEFITS OF FRUITS IN MILKTEA

Mango

Mango is rich in nutrients particularly Vitamin C , which aids immunity ,

growth and repair and iron absorption yet it is low in calories. It also contains

small amounts of phosphorus, pantothenic acid, calcium, selenium and iron.

Mango contains Polyphenols and Mangiferin which is really high in anti-

oxidants which is important, it protects your cells against free radical damage.

It is a good source of immune-boosting nutrients.

Vitamin A is essential for a healthy immune system, as it helps fight

infections. Meanwhile, not getting enough vitamin A is linked to a greater

infection risk. It has over a dozen different types, including mangiferin,

catechins, anthocyanins, quercetin, kaempferol, rhamnetin, benzoic acid and

many others. On top of this, the same amount of mango provides nearly

three-quarters of your daily vitamin C needs. This vitamin can help your body

produce more disease-fighting white blood cells, help these cells work more
effectively and improve your skin's defenses.

Orange

Sweet, juicy oranges make a delicious and healthy snack or addition to a

meal. A whole orange contains only about 60 calories and has no fat,

cholesterol or sodium, and, "oranges are well known for their vitamin C

content," said Laura Flores, a San Diego-based nutritionist.

Indeed, oranges offer many health benefits: They may boost your immune

system, give you better skin, and even help improve your health heart and

cholesterol levels. In addition, some evidence suggests that eating oranges

may help reduce the risk of respiratory diseases, certain cancers, rheumatoid

arthritis, ulcers and kidney stones. Orange juice is also packed with nutrients.

However, the juice doesn't contain the fiber found in the orange pith, the white

substance between the peel and the flesh. It's also easier to consume too

many calories when drinking orange juice than when eating an orange,

according to the U.S. Centers for Disease Control and Prevention.

Most citrus fruits have a good deal of vitamin C, and oranges have high

levels even compared to their tangy brethren. Vitamin C, a potent antioxidant,

protects cells by scavenging and neutralizing harmful free radicals, according

to a 2018 review published in the journal Advances in Analytical and

Pharmaceutical Chemistry. Free radicals are reactive atoms that can form
from things such as environmental pollution, cigarette smoke and stress, and

exposure to a high level of free radicals may lead to chronic conditions such

as cancer and heart disease.

The vitamin C in oranges may also boost a person's immunity to everyday

viruses and infections such as the common cold, according to the same

review. Some research suggests that the vitamin C in oranges may be linked

with a lower risk of certain cancers. In addition, a 2013 study published in the

journal Nutrition and Cancer found that the high amounts of vitamin C and

folic acid, coupled with the antioxidant properties, in orange juice can reduce

DNA damage and, therefore, the risk of cancer.

In addition to vitamin C, oranges contain fiber, potassium and choline, all of

which are good for your heart. Potassium, an electrolyte mineral, is vital for

the healthy functioning of the nervous system, and a lack of potassium can

lead to arrhythmia (an irregular heartbeat), increased blood pressure and a

depletion of calcium in bones, according to the U.S. National Institutes of

Health.

Apple

Apples are mainly composed of carbs and water. They’re rich in simple

sugars, such as fructose, sucrose, and glucose. Apples are very rich in fiber. A

single medium-sized apple (100 grams) contains about 4 grams of this


nutrient, which is 17% of the Daily Value (DV). A portion of their fiber comes

from insoluble and soluble fibers called pectin. Soluble fiber is associated with

numerous health benefits, partly because it feeds the friendly bacteria in your

gut.

Apples are mainly made up of carbs and water. They also contain fiber,

which moderates blood sugar levels and promotes gut health. Apples boast

many vitamins and minerals, though not in high amounts. However, apples

are usually a good source of vitamin C. Vitamin C. Also called ascorbic acid,

this vitamin is a common antioxidant in fruits. It’s an essential dietary nutrient

that has many important functions in your body Potassium. The main mineral

in apples, potassium may benefit heart health when consumed in high

amounts. Apples are not particularly rich in vitamins and minerals. However,

they contain decent amounts of both vitamin C and potassium. fiber, which

moderates blood sugar levels and promotes gut health. Apple is a weight loss

friendly food and may compliment a healthy weight loss diet largely due to

their high fiber and low calorie counts. Eating apples on a regular basis may

help prevent type 2 diabetes, as well as keep your blood sugar levels stable.

Apples can help prevent high blood pressure. Because apples are high in

potassium, a mineral that helps control blood pressure, they can help reduce

the risk of stroke.

A. Local Literature
By 2009, Serenitea’s shops had already been doing well and other

entrepreneurs soon caught on. Happy Fanshu, in 2009, opened near Far

Eastern University, bringing milktea to droves of students. This was only the

beginning. Milk tea shops then began to populate near Ateneo, La Salle, and

UP with their quirky milktea puns: Tealogy, Infinitea, Q-tea, and more. This

was the true start of the explosion.

Milk tea shops began to compete with coffee shops. Milk tea shops, after all,

carried a similar ambience, a casual space that allowed visitor to stay for long

periods of time-perfect for the student with the paper to finish or friends to

hang out with. The massive number of students getting in on the trend, buying

milktea as both a caffeinated pick-me-up and a sweet treat, allowed this

milktea shops to thrive. On top of that, milktea had edge of being “novel” and

also being branded as “healthier” drink.

The tasty Passion Fruit Tea Burst is made using fresh fashion fruit source

from Ecuador and Vietnam, with Jasmine Tea topped with Pearl and Coconut

Jelly. Coco’s enticingly delicious Pineapple Black Tea Jelly has pineapples

from Taiwan with Assam Black Tea topped with Coconut Jelly. A crowd-

overflowing with freshness and succulent tastes.

Local Studies

Proving milktea’s growing popularity, Grabfood stated that Southeast Asians

drink four cups of this drink per person per month. Philippines rank second

highest milktea drinkers in Southeast Asia who reportedly drink five cups of

bubble tea per person per month. Among the top flavors for Filipinos are

cheese, milk tea with pearl, wintermelon, pandan, and chocolate, with pearls

as the leading bubble tea topping followed by cheese and pudding. According

to GrabFood, bubble tea drinkers are also more likely to order the drink during

lunch time on all days of the week, confirming that it’s the perfect complement

to a midday meal.

B. Foreign Literature

Bubble Tea, pearl milk tea or Boba Tea, are the names giving to the

popular people’s drink in Taiwan which was invented by Hanlin Teahouse in

Tainan city and Chunshui Hall in Taichung city in the 1980s. This "national

drink" is a black tea, oolong tea or green tea based with milk, powdered milk

or condensed milk, and add the fresh fruit, chewy tapioca balls, or fruit jelly on

the top. Bubble or pearl refer to tapioca balls. Tapioca is a starch that
extracted from cassava root, by adding some water, sugar and food coloring

to become different color balls. Bubble tea serves in transparent cups with a

fat wide straw, so while people sip up, the surprisingly bubbles come with

delicious liquid. It is a unique refreshing drink and unforgettable sweet snack

which can be served in iced cold or hot. In fact, it is a customized drink,

people can decide its sweetness, coldness, and toppings, by the amount of

sugar, ice, type of tea and fruits or bubbles. While its globalization, the bubble

tea shops not only have developed the high brewing tea, but also have

invented many different flavors to fit the local tastes, such as latte coffee

bubbles, smoothie bubbles, oreo bubbles, Japanese mochi bubbles, taro milk

bubbles... etc. (Twinings 2018.)

Tea is considered a universal drink in the Chinese community. During the

different seasons or at different regions, it can be served with different

seasonings, such as ginger, mint, tangerine peel, sesame...etc. Drinking tea is

not only focusing on the color and fragrance of tea but also attaches great

additional medical value in practice. The tea culture in Taiwan has been

developing for a couple hundred years. It has gone through an export-oriented

production stage and now has come to a consumer-centered selection stage.

Taiwan started planting tea trees as early as Dutch rule in 17th-century.

During the Japanese occupation (1895-1945), Taiwan’s tea was sold in large

quantities to overseas markets, it was the major economic crops as

international trade commodities. After the 1970s, it was accompanied by


Taiwan's economic take-off and modernization, the role of tea switched from

the export to the supply of domestic demand. Meanwhile, the government

launched Chinese tea arts promotion, tea has become an indispensable drink

for Taiwanese people in their daily lives. In the late 1980s, tea culture

gradually developed to a variety of new tea consumption patterns such as

new type of drinks with milk and tapioca pear, the automatic sealing machine,

teahouses, tea shops...etc., was opening a new chapter in Taiwanese tea

culture. Bubble tea is different from traditional tea drinking methods, it is a

highly rigorous and systematic technology. This convenient takeaway mode

combined with the efficiency hygienic packaging allowed bobble tea became

popular, not only in Taiwan but also to the world. (Hwa Gung tea 2018; Chang

2017; Bubble tea supply 2017.)

Milktea is very popular because it is really delectable. This taste grows so

special when we bring beverage to the tea. Boba, tapioca, fancy tea, drink

tea, pearl drink tea. They consider the drink was produced in the 1980s in

Chun Shui Tang Teahouse in Taichung, China after its founder, Liu Han-Chieh,

observed that service of frozen drink in Japan and its product development

manager, Lin Hsiu Hui, Brought tapioca balls to the water. Others think that at

the same period, Tu Tsong-He, the owner of Hanlin Teahouse at Tainan, Chin,

began to make conventional white tapioca eggs, with the appearance of

pearls, to milk tea fancy tea or Pearl drink beverage that has seen in 1980s

and later. The others one, e.g., green tea, dark tea, oolong drink, white drink.
Each of drink tea have several benefits. For instance, the dark drink improves

the ability of arteries to relax and grow to make the blood pressure growing.

Because this demand is really high, this industry trend has grown dramatically

fast and this target group of consumers could remain students and working

group that exist under the age of 30. Some stores have been moved up, so

drink tea isn’t as extraordinary as it used to be.

Bubble tea (also called Pearl drink tea, fancy drink tea, boba juice, boba

tea, or just boba) is the Chinese tea-based food manufactured at Tainan and

Taichung in the 1980s. Most bubbletea recipes include a beverage component

combined with fruit or drink, to which chewy tapioca eggs (called bubbles,

beads, or boba) and fruit jelly are often added. Ice-blended variants are

commonly blended with fruit or syrup, resulting in the slushy consistency.

There are numerous varieties of this food with a wide variety of ingredients.

The two most common varieties are fancy milk drink with tapioca and fancy

Foreign Studies

The national drink Bubble tea is a successful example of Taiwan’s cultural

and dietary integration, symbolizing the ultimate creativity of Taiwan’s food

industry, and driving the development of a series of industrial chains such as

raw materials, manufacturing processes, catering, and franchising, and this


industry chain includes tea and raw materials. According to the Statistics

Division of the Ministry of Economic Affairs, Taiwan can sell 1.02 billion cups

of bubble tea each year, with an average consumption of 44 cups per person

per year, which has a huge market potential, estimate the global business

opportunities driven by bubble tea amount to US$50 billion each year. (UDN

news 2017.) The statistics from the Taiwan Chain and Franchise Association

showed that the chain of beverage stores has increased by 7% to reach 24%

in the past three years. In 2016, there were 20,121 beverage stores in the

market and 5,580 overseas exhibitors. The two biggest chain convenience

stores in Taiwan, 7eleven, and Familymart have entered this bubble tea

business since 2017. Normally tapioca balls require 1.5 hours cooking time,

but those convenient stores use the new type of tapioca balls, frozen mini

balls. The preparation procedure is simple as clerk only needs to open the

package, then put them into the hot tea and stir them with ice cubes. But

people cannot get the customized drink since this system does not allow to

adjust sweetness or amount of ice. (Business Today 2017.)


Chapter III
Methodology
1. Research Design

The research designs for this study is quantitative and descriptive

design. We will gather data through survey questionnaires which will be

given to the students of Binan Integrated National High School for them to

evaluate the said product. The outcomes of the said survey will served as

the basis in the whole process of the study and will testify if the study is

feasible and reliable in the market.

2. Population, Sample and Sampling Techniques

In the study, the researchers used the students in Binan Integrated

National High School as their respondents to complete their paper. Using

the Slovins Formula, students out of 4509 students of Binan Integrated

National High School will be the respondents of the said study. From these

4509 students, the researchers decided that 367 people will represent

these 4509 students and it will be chosen randomly.


Slovin’s Formula is used to calculate the sample size (n) given to the

population size (N) and a margin of error (e). It is a random sampling

technique formula to estimate sampling size.

that can be recycle. Some of the excess fruits or its peel can be used for
fertilizers. Also, the plastic cups can be sold in the junkshop for additional
money.
