“Sweet and Sour Tuna Meatballs”

Ingredients:
Oil for frying
Tuna Meatballs:
500g tuna Sweet and Sour Sauce:
2 onion, minced 1 garlic glove, minced
5 egg 2 onion
1 cup soft bread crumbs 2 can pineapple chunks
1 garlic, minced 1 tablespoon corn starch
Salt 1/3 cup vinegar
Pepper 1/3 cup light brown sugar
1 tsp. magic sarap 2 packs Tomato Sauce
1 whole carrots, chopped finely ½ cup nestle cream
¼ cup sugar Salt and Pepper to taste
3 tablespoon potato starch Green Bell Pepper (cut into chunks)
Eden Cheese (grated) 2 Carrots (cut into chunks)
Quail eggs (hard boiled) Corn Starch

PROCEDURE:

1. Cook the tuna, drain, mash then set aside.


2. In a bowl, combine the egg, bread crumbs, garlic, onion, carrots, eden cheese, salt,
pepper, potato starch and magic sarap. Then add the Tuna over the mixture and mix
well (add salt and pepper if you want to).
3. Prepare the quail eggs (hard boil)
4. Shape the mixture into balls putting a cooked quail eggs in the center wrapped with the
tuna mixture.
5. In a pan, cooked the tuna balls until golden brown, drain. Set aside.
6. For the sauce: In a small bowl, whisk together corn starch and water. Set aside
7. In a saucepan, Sautee the garlic, onions, carrots and green bell pepper. Then combine
Tomato Sauce, Pineapple Chunks with the juice, vinegar, water, brown sugar and
nestle cream. Bring to a boil over medium heat.
8. Stir in corn starch slurry and cook until thickened, about 1-2 minutes. Remove from
heat.
9. Plate the cooked tuna meatballs then pour some sweet and sour sauce, garnish and
you’re done.

“Chocolate Cake con Leche Flan”

Ingredients:

Caramel: 1 ½ cup evaporated milk ½ tbsp. baking soda


½ cup sugar ¼ cup nestle cream ½ tsp baking powder
2 large eggs
Leche Flan Layer Chocolate Cake Layer: 1 cup milk
8 Large egg yolks ½ cup cake flour ½ cup butter
½ cup sugar ½ cup sugar 1 tsp vanilla
½ cup condensed milk ½ cup cocoa powder ½ cup nestle cream

PROCEDURE:

1. For the Leche Flan Layer: Combine the egg yolks, sugar and condensed milk, mix well.
Add the milk and nestle cream, Mix until well combined.
2. For the Chocolate Cake Layer: combine the cake flour, sugar, cocoa powder, baking
soda, baking powder and mix well. Add the eggs, milk, butter, vanilla and nestle cream.
Mix well and set aside.
3. For the caramel: In a saucepan put the sugar, cook over medium heat until sugar
caramelizes, make sure all sugar are melted and no granules left. Immediately transfer
caramel into the cake pan, spreading it evenly.
4. Put the Leche Flan batter in the cake pan, then add the chocolate cake batter carefully and
bake in a water bath in 350 degrees Fahrenheit for 55-60 minutes.
