I.BACKGROUND OF THE STUDY

According to Maryann Jacobsen (2015) most of the people do not like foods with a
bitter taste children have more sensitive buds than adults and because of that children learn
to hate Vegetables, Vegetables are not linked to eating enjoyment, kids do not value their
health they only value taste and satisfaction they not even think the nutrients that will
help to their body. Most of the children was prefer to eat meat and junk foods than vegetables.
Based on the result of 6th nutrition survey they are low percentage of people who are
eating vegetables rather than eating junk food (40% vegetables 60% junk food) junk food
is not good for the people especially to the kids, it’s too hard to avoid junk food because
food companies have mastered the perfect taste sensation, largely blend of salt, sugar & fat
and it will cause poor nutrition and it can contribute to stress and tiredness.

Many people loves to eat squash in the Philipines they usually use buttercup squash,
this squash has a great texture,attractive color and have a sweet mild flavor. some mommies
used buttercup squash for feeding babies because buttercup squash can easily to eat
specially when the squash is already mashed and this vegetables can help to the health of the
babies. People likes to eat sweet potato the taste are sweet that why people eating this as a
desssert, some kids or teenager didn’t eat sweetpotato because of being rough but according
to jessie szalay (2018) sweet potato truly matcha the description “delicious and nutritions this
veggies are packed with Vitamins and nutrient and are sweet to eat this vegges are some of
the best sources of Vitamins A.

Fried banana rolls (turon) is a filipino snack that sweet and crunchey. Saba banana
jackfruit and brown sugar are rolled together in a flour lumpia wrapper and fried to a golden
crisp. Turon can help body is healthy because of banana according to cho’ys cut (2015)
cooked banana’s give some dietary fibers but eating too much turon can harm to the health
of everybody specially too much intake of sugar according to jillian kubala (2018) excess of
sweetened food and bevereges can lead to weight gain blood sugar problems can increased
heart disease.

Some research did not able to come up with this topic researcher identifiying this
study in generelly if has not specific researcher specifically identifying this study why
people do not like to eat vegetables like squash and sweet potatoes Vegetables

like squash have more benefits to our health it contains beta carotene it can help healthy
skin clear eyesight good growth glossy hair and better immune syetem and it also contains
minerals such as iron for healthy blood and calcium for strong bone and teeth and also
sweet potato too it contains more benefits to our health sweet potato are rich source of
fibre containing an array of vitamins and minerals including iron, calcium, selemum and
they’re a good source of most of our Vitamins B and Vitamins C. Sweet potato has a
high antioxidant known as beta carotene which converts to Vitamins A.

Researcher conducted study of squash and sweet potatoes as an alternative main


ingredient for turon to know the effectiveness of it for children. Children prefer to eat turon
as a dessert that’s why researchers build a new taste that will impress the student of San
Mateo Senoir High and that is Ipomoea Cucurbita Roll.

II. STATEMENT OF THE PROBLEM

The purpose of this study is to investigate on the innovation of the original of the recipe turon
into Ipomoea Cucurbita roll and its appeal to student of San Mateo senior high school

It seeks to answer the following:

1. What are the main ingredients of Ipomoea cucurbita roll?

2. What are the produces in making Ipomoea Cucurbita?

3. What is level of acceptability of the Ipomoea Cucurbita in terms of

A. physical appearance

B. Texture

C. Taste

D. Nutrition Value

4. What are the suggestions to improve the quality of Ipomoea Cucurbita rolls?

III. SCOPE AND LIMITATIONS

This study will focus only on the level of acceptability of the innovated product (Ipomoea
Cucurbita roll) the students of San Mateo Senior High School. A researcher made survey
questionnaire which will be use to determine the level acceptability and random sampling will
be used to select the group of student who will participate in the study.

IV. SIGNIFICANCE OF THE STUDY

The Purpose of this study is to target people who are picky eater and to innovate a new and
healthier version of turon especially to the students of San Mateo Senior High School.

The Benefit that Teenagers will get from this study is by having the importance of eating
vegetables like the nutrients and antioxidants that may boost to the teenagers immune system

and to protect our eyesight and it can support our physical growth of the body and for
preventing future health problems.

The Benefit those Parents will get from this study that they will know the best and nutritious
food to their kids and also the benefits to their health like reducing their risk for heart disease
including heart attack and strokes.

And to the Future Researchers the benefit they will get to this study is the information that
they need to their study if they want to innovate again.

V. RESEARCH METHODOLOGY

These chapters represent the method and techniques utilized in this study. It likewise
describes the research design, respondents of the study locale of the study, researcher
instrument and data gathering procedure

A. Sampling

the researcher used the population of grade 11 student of San Mateo Senior High School
during the school year 2019-2020 there are four (4) strands in techvoc student because the
researcher aims to gather the data of the total of one hundred (100) student by the strand of
Bread & Pastry A,B. Eim, Comprog in San Mateo Senior High School.

B. Data Collection/Data Gathering Methods

In gathering data the researcher used a survey questionnaires each of the respondent given
a questionnaire which is formulated by researcher and validated by the expect in gathering
data the researcher

C. Ethical Issues

In order to gather data, the researchers sent a letter to Mr. Absalon C. Fernandez
principal through Mr. victorino v. butron coordinator of San Mateo Senior High School in order
to get approval to conduct the survey.

The researcher need parental consent for the choosen respondent to know the level of
acceptability of the innovation ipomoea cucurbita roll the researcher respect and expect the
gratitude feedback and suggestion to improved ipomoea cucurbita

D. Data Analysis Plan

To analyzed and interpret the data gathered, the following statistical measures were
