Nyonya Potato Soup

Ingredients:

- 250g chicken or meat (use dried anchovies, if you prefer)


- 3 potatoes
- 1 shallot
- 1 garlic
- 2 slices of ginger
- 1.5 teaspoons fermented bean paste (tauchu)
- 700ml of water
- Salt to taste
- 1 teaspoon of oil

Steps:

- First, get rid of the chicken smell by adding some hot water into a bowl that contains
the chicken that will be used. Then, take out the water and keep the chicken in the
fridge while preparing the other ingredients.
- Slice the shallot and garlic into smaller pieces so that it is easier to pound using
pestle mortar/blend using blender.
- The same goes to sliced ginger.
- Then, cut the potato into smaller pieces (according to preferences).
- Saute the shallot, garlic, and the fermented bean paste. Fry it for 30 sec, then add the
ginger.
- Then, put in the chicken, and after some quick stir, add in the water and potato.
- Let it boils. After it starts to boil, simmer it for about 1 hour and 30 min.
Bo Bo Cha Cha

Ingredients:

- 140g taro (diced)


- 70g purple sweet potato (diced)
- 70g yellow sweet potato (diced)
- 1 banana
- 40g sago
- 50g boiling water
- 80g tapioca flour
- 160g sugar
- 250g coconut milk
- 3 pandan leaves (aka screwpine leaves)
- Some salt to taste
- Red and green food colouring

Steps:

- Steam the diced taro, purple sweet potato and yellow sweet potato for 20 minutes.
- Cook sago in a pot of boiling water until translucent. Sieve the cooked sago to remove
water and add cold water to the cooked sago. This will avoid the sago from sticking
together.
- Cut banana into bite pieces.
- To prepare the tapioca jelly:
a. Create a dough by adding water to the tapioca flour. The water has to be boiling hot or
else the flour wouldn’t come together as a dough.
b. Divide the dough into two and add colours (red and green) to each of the dough.
c. Flatten the doughs and cut them into smaller pieces.
d. Boil the pieces of dough until they turn translucent.
e. Once cooked, put them into a boil of cold water to avoid the tapioca jellies from sticking
together.
- Add sugar to 250ml of water. (Do not put all sugar and adapt the sweetness according to
taste according to your preference
- Add coconut milk and allow it to simmer.
- Then add the taro, sweet potatoes, sago, tapioca jelly and lastly, banana.
- Allow the Bo Bo Cha Cha to simmer.
Winter Melon Soup

Ingredients
- 120g chicken
- 1 tbsp goji berries
- 3 ginger slices
- 5 red dates
- 1 honey date
- Winter melon
- Carrots
- Dried squid/Scallop

Steps:

- Cut winter melon into cubes and remove the seeds.


- Cut carrots into smaller pieces.
- Blanch chicken in a pot of boiling water with the ginger slices.
- In a clean pot, add water and allow it to boil.
- Add chicken, goji berries, carrot, honey date and red dates once water boils.
- Cook the soup for 60 minutes.
- Add winter melon and allow soup to continue cooking for another 30 minutes.
Apple With Snow Fungus Soup

Ingredients:
- 1L water
- 1 red apple (substitute with pear)
- Snow fungus
- 4 red dates
- 1/2 tbsp north apricot seeds
- 1/2 tbsp south apricot seeds
- 70g rock sugar
