sicilian pesto

Sicilian pesto is different from the classic green pesto (called Genoese pesto).
In fact, Sicilian pesto is red.
There are several variations, for example in Trapani (Sicilian city) this pesto is made with almonds
and without ricotta.
My version, is general version, tested several times.
In other versions, there are many problems, such as an excessive use of almonds can lead to a bitter
taste.
In my recipe I used spaghetti, but you can use any type of durum wheat pasta.
The recipe I give you is for 4 people, if you have to prepare it for 2, you have to halve the
ingredients.

the recipe for 4 people:


30 gr basil
50 g of grated Parmesan

150 g of cow's ricotta


500 g of tomatoes (small and round)

1 clove of garlic
Salt and Pepper To Taste.
100 ml extra virgin olive oil
400 g pasta (spaghetti)
