Sweet corn and capsicum curry |pure vegetarian dish|punjabi

It is a very simple and delicious Punjabi curry of corn and capsicum in creamy onion and tomato
gravy.Corn and capsicum are one nice pair to make a pure vegetarian dish.This curry is a must for
sweet corn lovers.Kids will love the natural sweetness of the two vegetables. It is a healthy and
nutritious digestive friendly recipe for the whole family.

Cooking time: 30 minutes

Servings: 3

Ingredients

 1 cup sweet corn.


 1 Capsicum.
 1 onion, finely chopped.
 1 tsp cumin seeds / jeera.
 1 tsp coriander powder.
 1 tsp red chilli powder.
 1 bay leaf / tej patta.
 2 tbsp oil.
 1 inch cinnamon.
 1 tsp ginger garlic paste.
 3 tomatoes , finely chopped.
 ½ tsp turmeric / haldi.
 1 tsp salt.
 ¼ cup cashew paste / kaju paste,( prepared by soaking cashew in water for 20 min and grinding it
to a smooth paste).
 1 cup water.
 ¼ tsp garam masala.
 1 tsp kasuri methi crushed.
 2 tbsp coriander, finely chopped.

Instructions :

1. Firstly, heat 2 tbsp oil in a pan .Now, add sweet corn, capsicum and salute(fry) them for 3 min
and keep them aside.
2. Take a fresh pan , add 2 tbsp of oil , bay leaves, cinnamon, cardamom, jeera and salute them
well .
3. Now add onion and salute it till it turns golden brown. Next add spices and salt and cook for 2
min.
4. Further add tomato paste and cashew paste and cook them for 8 min. Later when the oil
separates , add sweet corn and capsicum and cook them for 10 min under low flame.
5. Later add kasuri mathi and garam masala and mix well.
6. Now garnish it with grated paneer or coriander leaves.

And your curry is ready for pait puja !!!!!!
