Farmer's Soup
Mise en Place:
½ lb of Onions diced
½ lb of Diced Cabbage
¾ oz of Garlic (minced)
1 gallon Chicken Stock
1 cup turnip (diced)
1 Sachet
1 Cup Tomato (diced)
2 lb. of diced Beef
3 oz of Clarified Butter
4 oz of Leeks (diced)
4 oz of Lima Beans
8 oz of Corn
16 oz of Mirepoix (diced)
16 oz of Potato (diced)
Method of Production:
In a stock pot heat the butter and sear the beef until brown.
Add the vegetables and sauté until tender.
Add the stock and sachet and bring to a simmer for 30 minutes.
