Chicken and Chorizo Pies

Serves 6
Ingredients
Ready made puff pastry
1 egg, beaten
1 tbsp Olive Oil
60g Chorizo, diced
500g Leeks, sliced
1 tsp Rosemary
1 tsp Smoked Paprika
2 tbsp Plain Flour
500ml hot Chicken Stock
6 Chicken Thigh Fillets, cubed
2 Potatoes, skinned and diced

1. Preheat oven to 220C, gas mark 7. Roll out pastry and cut into shapes. Transfer to baking tray. Brush with
beaten egg. Bake for 10-15 minutes until puffed and golden brown.

2. Heat oil in saucepan. Cook chorizo and leeks for 5 minutes, until leeks have softened. Stir in rosemary, paprika
and flour. Cook for 1 minute. Add hot stock.

3. Add chicken and potatoes. Season to taste. Simmer gently for 15 minutes until potatoes are tender and chicken
is cooked through.

4. Divide chicken mixture between bowls and place pastry on top.
