Roasted Cauliflower with Cumin, Coriander and Almonds

Ingredients

1 Cauliflower broken into florets


Sea Salt
Olive Oil
1 knob butter
2tsps Cumin Seeds
2tsps Coriander Seeds
¼tsp Chilli Flakes
1 handful Blanched Almonds, smashed
Zest and juice of ½ a lemon

1. Preheat oven to 200C/400F/gas 6.

2. Blanch cauliflower in salted boiling water for a couple of minutes, drain and allow to steam dry. Toss in a good
slug of Olive Oil and the Butter.

3. In a pestle and mortar bash the spices and chilli with a pinch of sea salt then mix with the smashed almonds.

4. Slowly toast the mixture in a hot, dry pan. After a couple of minutes, add the cauliflower. Once it has a nice bit
of colour and the zest and lemon juice, mix well and fry for a further minute.

5. Place in oven for about 15 minutes to crisp up.
