Answer:
I have conducted an interview with F&B expertise where he called himself as wine
and fine dining connoisseur, who had been in the industry for more than 10 years. He studied
F&B Management in Canada. He had a lot of experiences to be a trainer of wine courses, and
he worked for some restaurants as a general manager, and the one is at ToGo Café and
Gourmet located in Jakarta, Indonesia. More of it, he also holding share in some restaurants,
Mr. Ponti does believe that leadership can be taught. It was expressed by how he
learned from the older managers who operate the same business. He seeks their knowledge,
digging any kind of lesson he could get from the seniors, big player and many more
intelligent people, then he applies the lesson within the restaurants where he runs in.

the process and help them gather the thoughts to resolve and regain a better performance and
outputs. They were required to think together and maximize their capabilities to achieve

because they will come up with an option which they think together based on their personal
experience or troubles within the business process. And it will also come up with a set of
solutions which they decided to agree together. Hence, the once a week meeting with the
general manager, Mr. Ponti, will be the chance for assessment of the set of solutions they had
offered to him. Later on, he will approve, evaluate, reviews, and give them insights and
advices to fix any matters exist in the company and empower them to do their best. This
process both help him and his subordinates as it is more efficient and effective to do. The
manager will know the details of how the business operates their services to its
customers/consumers from the first-line employees who work closest to the customers. Such
as the server, waitress and waiters, in order to get genuine information about how the
customers feeling from the service (Food and Beverages) which provided to them. This
approach also works by providing guest comment card which continually asked to be filled
He believes that as a leader, it doesn't mean he is the most perfect in any particular
work in the business. He knows that he should hire people who are more intelligent than him,
in the particular area they work for. From that process, he later could give the freedom to the
employees to maximize their potential and doing their best to achieve maximum output for
the company. In short, he must make sure that the people whom he hired are the best people
he could rely on and he could trust in relation with their every expertise and capabilities to
help the company run the business. By the process of recruitment, he is the most selective to
selecting the candidates. The experienced candidates will be given an amount of test of how
to operate the duty was being asked for and he will evaluate their abilities. Furthermore, he
also never missed to scale and trace the candidate's past job by searching related information
about their backgrounds. Not only by evaluating the reference letter, he will also give a phone
call to the latest company which the candidates work at. And sometimes, he will give a direct
call to the owner of a company/restaurants who also his colleagues. Since food and beverages
company is not a big industry as other companies who perform a different kind of business,
the people who work in the scope of restaurant industries will not be as much as others. In
fact, the big player could operate more than 5 licenses of a restaurant with hundreds of
branch. So it will be a benefit for Mr. Ponti to gather information of a candidate just by
listening to the recommendation and perspective from his peers which the candidate ever
work with them before. Thus, a performance background of FnB workers is the thing they
should keep up if they want to keep their work in FnB areas. Because there's a list of
blacklisted people in the business which they keep to support each other business by not
hiring a blacklisted person in the business. This scheme of the process shows us how intimate
the people who work in the areas of Food and Beverages that they are still caring for each
The urges to produce an optimum performance will also lead the leader to strive to
think of how to perform the business better. Regarding this matter, Mr. Ponti was never
stopped to give training to the employees. As in Togo Café, they had a most likely product
which made the customers coming back every day, which is Togo's Coffee. From fresh
coffee beans, and fresh milk steamed for a cup of cappuccino, latte and many other coffee's
menus, the speciality taste of coffee will never fail to attract the people to sip from their
takeaway cup. Hence, the urge to keep the same taste of coffee produced every day is another
homework the company will carry. In order to solve the case, Mr, Ponti arranged two to three
coffee training in a year for the baristas he had. They were trained to produce a better quality
of coffee and trained to replenish the latte art to attracts more customers to come.
Despite being bold, he is always trying to engage the employees by giving praises and
rewards once they accomplished their job well and resulting in great profitability. By giving a
warm smile once he enters the restaurants, build a one on one communication to the
employees. Asking about their families condition, and support their work verbally, had turned
his actions into a positives engagement from the employees. Hence, they do not feel that they
only work there as workers, but they have the same feeling that they are owning the
company. This entire work of providing a good leadership had successfully transformed
ToGo Café as the most visited restaurant on a daily basis for the last few years. As the widely
known statement which stated that, happy employees, happy customers. Loyal employees,
loyal customers.
