The Asado Huilense is a traditional pork dish from the department of
Huila which is located in the southwest of Colombia. This dish is very
popular during Las Fiestas de San Pedro, a religious celebration
introduced by the Spanish conquerors. Usually, it takes place in Neiva,
the capital of Huila, at the end of June of each year with traditional
Colombian music, parades and delicious traditional food. Since 1960,
The Feasts of San Pedro took a new direction and were named Folk
Festival and The National Reign of Bambuco.
