TOP 5 RAJASTHANI FOOD

1.Dal Bati Churma


Dal Bati Churma is a complete & very popular dish in Rajasthan.
It is a combination of three different food items - Dal (lentils),
Bati & Churma (Sweet). It is a typical Rajasthani dish.

Traditional way to serve it is to first coarsely mash the bati then


pour pure ghee on top of it. It is served with the dal (lentils),
spicy garlic chutney & sweet churma. It is commonly served at
all festivities, including religious occasions, wedding ceremonies
& birthday parties in Rajasthan.

This is a very rich dish as there is a lot of ghee involved in it. Bati
baked or grilled balls of wheat flour dough. Dal is made of
lentils & can be little bit spicy. Churma is a sweet, made of
wheat flour, sugar & dry fruits. Ghee is an important ingredient
in all the three items.

2.Aloo Pyaaz ki Kachori


There are different types of kachoris like raj kachori, khasta
kachori, matar kachori, dal kachori but for us nothing can beat
combination of onion and potato with aromatic spices. The
dough and frying technique remains the same for all the
kachoris. Bursting with tongue tickling flavors, I first had a tryst
with these kachoris at a local street food stall during my visit to
Jaipur. A subtle sweetness of caramelized onions, a rustic
aroma of fennel, coriander and nigella, and the crisp flakiness
of the crust instantly took me in its gastronomic awe. Since
then, these have become my ultimate favorite when it comes
to savoring kachoris. Whether you are looking for a special
breakfast option or a high-tea evening snack, needless to say,
they make for a perfect lip-smacking treat and are sure to leave
you asking for more.
3.Mirchi Vada.

Rajasthani Mirchi Vada Pav or also known as Jodhpuri Michi


Vada is a popular street food, commonly served as a breakfast
dish. This is a spicy bajji or pakora as the North Indians refer,
where you have the Green chili stuffed with a spicy potato
stuffing spiced with North Indian spices.

Mirchi Bajji is one of my favorite dishes and yes, this is going to


be a long post with me rambling away! I know it’s been a while
since I wrote much. Times are hectic and I literally couldn’t
manage to write much.
However, Mirchi Bajji is my favorite one. While its a common
snack at parents home.

4.Gatte Ki Subzi

Rajasthan’s cuisine is very different from cuisines in other parts


of India. Rajasthan's terrain is made of up deserts and thus
availability of water and green leafy vegetables is scarce. Owing
to this scarcity, Rajasthanis used to use different types of
ingredients to prepare their food such as flour, dry fruits,
yogurt, pulses and spices. Secondly, because most of them
fought wars, they wanted to carry something that could last for
days. Hence necessity became the mother of invention. No
Rajasthani meal is complete without Gatte Ki Subzi.
Gatte Ki Sabzi is made from steamed dumplings made from
gram flour/ besan/ chickpea flour. Like all the other gravies,
there are many ways to make this curry. Some prefer it dry,
some make it using yogurt and some using tomatoes. I have
made combination of many recipes. I used both tomatoes and
yogurt to make the gravy.

5.KER SANGRI

Ker Sangri is a traditional Rajasthani dish made with dried ker


berry and sangri beans. Here is a tried and tested authentic
recipe to make Ker Sangri at home.

The cuisine of Rajasthan is very different from other states and


has an identity of its own.
The appearance and taste are unique and that is the reason it
attracts tourists from all over the world.Most of the popular
recipes from Rajasthan doesn’t use vegetable.One of the
reasons being in olden times, it used to get very difficult to
grow vegetables in extreme heat, and thus the Rajasthani
households used to rely on lentils, beans, and flours.

One such popular dish that is becoming popular all over the
world along with Dal Baati Churma, is this KER SANGRI sabzi.
I tasted this delicious dish during my Rajasthan trip and I was
hooked.
