Ingredients
1 tablespoon extra virgin olive oil
1 onion diced
1 teaspoon minced garlic
2 cups quinoa rinsed
2 teaspoons turmeric
2 1/2 cups vegetable broth
3/4 cup pomegranate seeds
1/3 cup walnuts toasted and chopped
4 scallions sliced

Instructions
1. Heat your oil in a medium saucepan. Add onion, garlic, and quinoa. Toast, stirring often, for 4
minutes. Add turmeric and vegetable broth.
2. Bring to a simmer, and then reduce the heat to low. Cover and cook for 20 to 25 minutes, until the
liquid is absorbed.
3. Remove from heat and allow to sit covered for 5 to 10 more minutes.
4. Toss with walnuts and scallions and serve warm or at room temperature.
