LOMO SALTADO

ingredients:

4 chicken breasts, cut into strips.


2 large pear tomatoes, julienned.
1 orange bell pepper, cut into julienne strips.
1 red onion, julienned.
3 garlic cloves, minced well
1/2 cup of white wine
3 spoons of low sodium soy sauce.
1 spoons. balsamic vinegar.
1/4 cup fresh coriander
2 spoons. of sunflower or canola oil.
Pinch of cumin to taste.
Salt and pepper to taste.
prepare:
1. Season the chicken with salt, pepper, cumin and set aside.
2.In a large skillet or wok, on high heat, add 1 spoons. oil and brown half of the chicken for 2
minutes, remove it and brown the other half and set aside.
3.Add the other spoons. of oil, the onion and let it brown for about 2 minutes. Then add the
peppers, tomatoes, garlic, and brown for another minute.
4.Return the chicken and pour the wine. Let it shrink for 1-2 minutes and then add the soy sauce,
the balsamic and keep stirring for an additional 3-4 minutes or until the chicken is done cooking.
5.Finally add the coriander, mix well and serve with your favorite accompaniment.
Is served:
with white rice, french fries
