PEMPEK
Pempek or empek-empek is a typical food from the city of Palembang. Pempek has existed in
Indonesia since the overseas Chinese era to Palembang. The name of the empek-pek or pempek
is believed to originate from the term 'musty' or 'pek-pek', that is, the term for Chinese uncles or
old men.

Based on folklore, around 1617 a musty 65-year-old who lives in the Assembly area (the banks
of the Musi River) was concerned to watch the abundant catch of fish in the Musi River that had
not been fully utilized, only limited to fried and boiled. He then tried other processing
alternatives. He mixes minced fish meat with tapioca flour, so that new food is produced. The
new food is sold by the musty bikers around the city. Because the seller is called "pek ... musty",
the food is finally known as empek-pempek or pempek.
So since then pempek made from finely ground sea fish and then given starch or more commonly
called sago flour. Some other basic ingredients needed in making pempek are eggs, garlic, salt
and flavoring.
Pempek has many variants of shapes such as: pempek submarine, pempek tofu, pempek shrimp,
pempek skin, pempek lenggang and many more.

at first pempek made from basic ingredients belida fish. However, because the availability of
these fish is increasingly rare and the price is more expensive, it is replaced with cork fish. Cork
fish at that time is very abundant, the price is cheap and the taste is no less savory with belida
fish. Then in this day and age pempek is more famous for the basic ingredients of mackerel fish.
Pempek serving is usually juxtaposed with cuko sauce. Cuko is made from boiled water, then
added with brown sugar, ebi, cayenne pepper, garlic and salt. For native Palembang people, cuko
has always been made spicy to increase appetite. But along with the influx of migrants from
outside the island of Sumatra, there are now many cuko with a sweet taste for those who don't
like spicy food. Another complement to eat these special snacks is fresh cucumber sliced diced
and yellow noodles.
