Smoker: Making dry rubs. Rubbing brisket, pork shoulder, chicken and various other meats and
food items. Loading, unloading and operating the smoker, ensuring adequate amounts of

Saucier: Making all of the house sauces and dressings. Pairing house sauces with special dishes.
Expo: Calling tickets, plating, and garnishing plates at the pass. Double checking plates to “sell” to
the food runners. Also retrieving any food items or ingredients needed by the line. Plating
desserts.
Line Cook: Grill station, sauté station, fry station and salad station
Prep Cook: Coming in before service to prepare mainstay menu items in bulk for the week
including entrees, sauces, braising meats, breaking down vegetables and helping prep daily
desserts.
Weekly Cleaning: Coming in on Mondays to power wash, pull hood filters and grease traps for
cleaning, cleaning walk-in coolers and organizing reach-in coolers, pulling expired product and
making prep list for the next week.
2010 – PRESENT

Seed starting on indoor grow lights and indoor aquaponics table. Construction of green house.
Transferring and planting crops in outdoor row garden. Rototilling, weeding, and cultivating.

cherries, corn, etc. Processing of said produce for canning and freezing. Tending to rabbits,

Preparing peat moss with a pulverizer, mixing grains with peat, measuring , weighing, and
recording data of worms. Separating hatch material from worm castings, reintroducing worms to
fresh peat and food and regulating temperature of hatchery and production worms. Bagging
worm castings for shipment and loading semi trailer with finished products.

2011 – 2012
REFRIGERATION TECHNICIAN, DEEM LLC; INDIANAPOLIS, IN
Cast iron plumbing, oxy-propane, brazing, silver soldering, high pressure medical gas line. Duct
work installation. Duct sealing. Drove a scissor lift, fork lift, and a lull lift.

2006 – 2010
