common ground for all flavors, and that has made Korean cuisine capture the Filipino

heart. Filipinos might find it easy to relate to South Korea’s galbitang, a short ribs stew

which tastes exactly like the Filipino nilagang baka. Meanwhile, rice is a staple that

connects South Korea to other countries across Asia (Tantengco, 2013).

The rising popularity of Korean culture throughout the world is called Korean

Wave. The popular Korean culture, such as K-Pop music and Koreanovelas, which has

spread mainly through mass media, are now enjoying high popularity outside Korea and

this is how the Korean Wave occurs, and Korean cuisine is rapidly gaining popularity in

the Philippines (Yu, 2003).

Food providers of this generation offer a variety of food with health benefits.

However, The Philippines is still one of the unhealthiest countries in Asia, lagging behind

India, Malaysia, Thailand, Vietnam and Sri Lanka. Based on a survey by pan-Asian

insurance giant AIA Group, the Philippines scored 61 out of 100, below the regional

average of 64. It is tied for ninth overall with Korea, India and Singapore. Unhealthy

eating habits are common as 84 percent of those surveyed said they tend to eat while

distracted, 81 percent admitted to eating unhealthy snacks between meals and 71

percent had their dinners close to bed time.

The typical Korean fare consists of vegetables and grains, as well as some meat

and fish, which are more often steamed or grilled than deep-fried. Food preparation

Like the Philippines, Mexico was also invaded by the Spanish colonization in 1521.

Spanish foods had the most influence on the Mexican cuisine. They introduced new

livestock, such as sheep, pigs and cows. They brought with them dairy products, and

garlic as well as many different herbs, wheat and spices. It was at this time that the

Mexican people saw the assimilation of many other cuisines including Caribbean, South

American, French, West African and Portuguese. As a result of this Mexican foods today

Burrito Koreano will exhibit the following:

1. Burrito Koreano’s Samgyeopsal Wraps are based from Korean-rooted food

influence with Mexican adaptation of flavors through the sauce and food

presentation through utilizing wraps. These will give the consumers a taste

of these countries’ diverse and rich cultures at the same time without

compromising convenience as it is a “ready-to-go” type of food service.

2. Burrito Koreano plans to position itself as a business that offers high quality

products to its consumers at a reasonable price. Most of the consumers prefer

healthy, convenient and ready-to-go food, and Burrito Koreano aims to achieve

these by catering to the said characteristics and needs of its customers.

Moreover, Burrito Koreano will be fusing Mexican and Korean culture through

the product elements found in each which entails their differences and how

they are combine to create a balance and delicious product.

3. Burrito Koreano promotes a healthy lifestyle most especially among the

Filipinos. It intends to showcase Korean culture through gratifying the

customers with its’ wholesome wraps as well as to appreciate this authentic

Mexican way of food presentation which is common and wildly used today.

Pork, lettuce, kimchi, bell pepper, garlic, carrot, onion, cucumber, sesame

seeds, chili pepper, honey, cheese, and the sauce which is Korean and Mexican

Filipinos also showed awareness of Korean food and drinks such as kimchi,

ginseng and soju, Korean brands such as Samsung, Kia and LG and most knew of

Taekwondo’s Korean origins.

However, despite the popularity of Korea today, traditional Korean culture

and language are still largely unfamiliar to Filipinos. As a result, Burrito Koreano

The Philippines is still one of the unhealthiest countries in Asia, lagging

behind India, Malaysia, Thailand, Vietnam and Sri Lanka. Based on a survey by

pan-Asian insurance giant AIA Group, the Philippines scored 61 out of 100, below

the regional average of 64. It is tied for ninth overall with Korea, India and

and Korean culture through combining the elements found in the cuisines of both

varying sauce that are rooted from Korean and Mexican blend of flavors adaptation. The

promotions and activities are done in the food stall and in the official website of Burrito

against its competitors is that the business created sauces that would somehow

give you a taste of the Korean and Mexican flavors which are commonly used in

Koreano as concerned, there are less competitors present, but in order to attract

more potential customers aside from the target market, which was stated above,

the enterprise decided to set a price that is affordable and reasonable for the

quality food and service being offered to its customers. It is also the competitors

who would influence any enterprise whether to set the prices of their products

independently or has to follow the lead shown by the competitors.

Third, desired mark-up is the amount added to the cost price of goods to

cover overhead and profit. It is the amount by which the price of a product

Burrito Koreano. Since Burrito Koreano will emerge as a food stall in food bazaars

such as Sugbo Mercado, or nearer malls such as Ayala Center Cebu, it will be

dealing with customers directly. The preparation of the product will also be done

in the food stall aside from the Samgyeopsal which is already precooked.

Burrito Koreano will utilize social media applications as to the selling and

promotion of its products and services. Announcements, discounts, promos, etc.

will be disseminated through the use of official Facebook, Instagram, and Twitter

3.4 Marketing Organization

There are several layers of management within Burrito Koreano. As a startup business in

the snack industry, we focus more on the day to day operation of the business. The

supervisor, which is Ms. Hannah Gayle Diez, shall be taking care of the first and main

branch of Burrito Koreano which is located in Lahug, IT Park. She will be managing staffs

and ensures that all organizational objectives shall be achieved in par with meeting the

financial objectives of the business.

The enterprise designated different department heads, with their corresponding staff or

assistant, shall be reporting directly and are under the care of their department head

respectively. There are four departments organized by the enterprise and these are the

Food preparation and handling department which will be the ones providing the services

to the customers.

Next would be the Purchasing department, they will be in charge in purchasing the raw

materials and ensuring to get fresh and of high quality products to be use. Third would

be the Marketing department which has the responsibility of promoting the business

especially since it’s still new and unpopular to many.

Last would be the Finance department which controls the inflow and outflow of cash in

the business and keeping track if the enterprise is still in line with the organization’s

strategies.

The different heads of the department will be collaborating with each other and directly

report to the supervisor in making sure that the business focus and drive will be attain

and standards and processes within the enterprise are executed properly and

consistently.

Given by this structure, Burrito Koreano’s entire marketing organization will be involved

in the effort of pursuing business stability. The marketing manager will be responsible for

the marketing plan implementation, working closely with the finance manager to guide

the sales that was accumulated which will represent how effective the strategy that was

implemented. The actual marketing effort (advertising, promotion, campaigns) will be

conducted by the assistant of the marketing head.

Since Burrito Koreano aims to provide quality and satisfaction to their customers in order

to gain loyalty and repetitive visits, the customer-oriented organization in which the needs

and desires of each customer group is taken into account because Burrito Koreano

believes that giving service and offering product of high quality and satisfaction level to

customers are the topmost priority.

Activities, Responsibility, and Timetables for Completion

All implementation activities are to begin at the start of the year 2018. Unless

specified, all activities are the responsibility of Burrito Koreano’s Supervisor, Ms. Hannah

Gayle Diez.

By January 2, create four managerial positions, food handling, purchasing, marketing

and finance. The supervisor will spearhead the functions and activities of the food stall.

The company will compose of nine employees from a variety of positions within the

company.

By April 10, the finance and assistant finance manager will report the actual sales

forecast of the company for the first quarter of the year.

By June 30, improve the strategic plan for target markets in order to increase

forecast of the company for the second quarter of the year.

By July 30, create and finalize a customer satisfaction survey for current customers

and clients to obtain information and use it to further improve Burrito Koreano’s

production and organizational methods.

By October 10, the finance and assistant finance manager will report the actual sales

forecast of the company for the third quarter of the year.

By December 30, the finance and assistant finance manager will report the actual

sales forecast of the company for the last quarter of the year. After that, the managers

aforementioned will create a report on the changes and the comparison between the

improve the overall performance of Burrito Koreano.

EVALUATION AND CONTROL

A. Performance Standards and Financial Controls

The financial reports together with the planned goals will be included in the project

report. These are the list of the following performance standards and financial controls

are suggested:

 The overall total of the budget in billings, new-product research and development,

and the customer survey will be equal to 65% of the annual promotional budget

for the coming year.

 The breakdown of the budget will be the following; 15 allocated to the billing cycle,

20 percent allocation to customer survey and marketing development, and the

remaining 30 percent allocation to a new-business development and

implementation.

 Assigned project team is responsible for reporting all financial expenditures,

including salaries and direct expenses. A standardized reporting form will be

provided by the marketing director.

 The marketing director is responsible for adherence to all project budget and will

report its current conditions to the company’s president on a weekly basis. The

marketing director is also responsible for any redirection of budget required for

each developmental project of the business analysis team.

 New product offering will be further evaluated on a quarterly basis to determine

its profitability. All product development expenditure will be distributed over a two-

year period, by calendar quarters, and this will be compared with the gross income

generated during the same period in the enterprise.

financial report.

Burrito Koreano plans to compare its actual performance with plan objectives to

analyze the effectiveness of its marketing plan. To do so, there are monitoring

procedures to be considered in order bring the plan to fruiton.

These include, but not limited to, the following:

 Revisions and updates in the plan to suit to the current situations that might affect

the company in the future.

 A monthly comparison of the actual sales to the planned sales in order for the

manager to provide a report to the managerial head and to the company for it

to have its records.

4.4.3 Machineries and Equipment Requirement

In making the Samgyeopsal wrap the following tools, equipment, and machineries

are needed:

A stove is an enclosed space in which fuel is burned to provide heating.

Stoves are generally used for cooking and heating purposes. The type of stove

that will be utilize is a gas stove or often times called as gas range which is a

kitchen appliance that is used for the purpose of cooking food. It uses natural gas,

propane, butane, liquefied petroleum gas or other flammable gas.

A refrigerator is used to artificially cool and store food and drink. It consists

of a thermally insulated compartment and heat pump that transfers heat from the

inside of the fridge to its external environment so that the inside of the fridge is

cooled to a temperature below room temperature. It also decreases the production

rate of bacterial contamination which can eventually lead to spoilage.

An electric grill uses an electric element to supply a constant heat source

and because there is no flame involved, other fuel such as gas, and charcoal are

not necessary.

4.4.4 Manpower and Skills Requirement

To guarantee that Burrito Koreano is still in line with its goals and objectives,

manpower must be complied with the right number of workers and staffs to make

sure that the processes and operations are still flowing accordingly. The sufficient

number of workforce will give enough confidence to the enterprise to meet the

demand of the market through its fast flow of production.

The skills required in making the Samgyeopsal wrap are only basic and easy

such as Marinating, Grilling, Mixing, Slicing etc. The processes involve in the

production of a Samgyeopsal wrap are purchasing of raw materials from the local

market, preparing of the ingredients used such as the perishable goods,

cooking/grilling of the pork belly, packaging or assembling of the product and

serving it to the customer. The manpower needed is the Purchaser, Food

Preparation Personnel or Food Handler, Store Supervisor, the Marketing Team,

and Finance.

The purchaser is involved in procuring the necessary raw materials needed

for the production of the product. They need to possess skills relating to stock-

taking and managing of the inventories to achieve quality control of raw materials.

The food preparation personnel are in charge of preparing the necessary

ingredients to be used in the actual production of the product. They are also the

ones in charge of creating/assembling the product with the raw materials available.

They must have the skills in: expert in food handling/preparation, good in

estimating proper serving of the product, knows how do proper waste

management and sanitary, knows the correct storage of both raw and cooked

materials, has a background about the things that may contaminate the pork belly

and other raw materials, knows the proper equipment and tools needed.

Store supervisor’s main task are the following: Manage retail staff,

(including cashiers); Meet financial objectives by preparing an annual budget;

scheduling expenditures; Formulate pricing policies; Determine daily coupons and

Ensure pricing is correct.

The marketing team are in charge of the promotional activities of the

enterprise. They are the ones brainstorming about the strategies being used in

advertising and promoting the newly opened business to a varying and distinct

market. They will think of ways on how to attract potential customers and achieve

their target sales by the end of the quarter. They must be good in sales talk,

creative, initiates teamwork and cooperation, commercially aware, and good in

influencing and negotiating to customers.

The Finance department takes charge in handling the earned money for the

day. They are responsible for accounting and bookkeeping of accounts within the

company. They also oversee the financial status of the business and try to

consolidate it with the sales and profit earned. They should be skilled in performing

basic accounting and bookkeeping as well as using the excel in presenting data.

4.4.5 Inventory Management

Good inventory management is essential but crucial to any enterprise as it will

determine the production rate and will ensure a secure supply for production. Bad

inventory management can compromise the supply for production which will lead to the

loss of consumers.

4.4.5.1 Raw Material

Raw materials are materials purchased that are yet to processed or turned to something

new. Such materials are pepper, sesame seeds, lemon, water, onion, garlic, ginger,

cucumber, carrots, bell pepper, and parsley.

The Ssamyang and Falafel sauce, as well as the grilled pork belly still needs to undergo

some processes before it is served for consumption

Materials that can be stockpiled are the garlic, onion, sesame oil, kimchi, sesame

seeds, pepper, and the Ssamyang and Falafel sauces, considering these products do

not expire easily and can be stored for a long period of time for future use.

The finished goods are the final results/outputs of the making that will be served in our

food stalls which will be located in food markets like Sugbo Mercado and Fiesta Minore.

These products must be inventoried for business purposes like accumulating information

on the demand of the consumers and to know the next batch of production

The containers of the used materials and the skin of the ingredients used in producing

the final product of “Burrito Koreano” are the only waste materials produced. These

will be controlled by providing a trash bin for the disposing of trashes. Observation of

proper segregation of waste materials is crucial.

The distribution system centers the sequential flow of procedures, systems, and

activities which are designed and linked to facilitate and monitor the movement of

products from the source to the consumer. It is a must for the business to make the

products perceptible and easily available to the consumers. It is also a need for the

enterprise to provide back-up supply in the production so that it can be quickly and

readily available to the customers.

5.1 Type of Ownership

The type of ownership Burrito Koreano has is partnership as it is one of the most

preferred and one of the best initial types of ownership for new businesses.

5.2. Organizational Structure

Burrito Koreano’s organizational structure represents a hierarchal arrangement of

line of authority, communication, and rights and duties in the organization. It will help

everyone in the business to know where to place themselves, what they’re supposed to

do, and who to work with. The store supervisor oversees all the operations in the

business. To help the supervisor, the heads of the departments of Food Handling and

Processing, Purchasing, Marketing, and Finance, together with their respective assistants,

spearhead the operations per department.

A. Confidentiality - the purpose of this policy is that information of the company within

its operations and anything else is important.

 Any documents relevant to Burrito Koreano must be kept in safe, dry and

 In case of emergency situations, there should be back-up data secured from

B. Codes of Conduct - this policy allows members to know what is morally acceptable

and what repercussions they will receive should they not act for the good of the business.

 All employees must not exhibit improper behavior towards customers and other

members in the business.

 Rules must be adhered by employees at all times.

 Should the employees express disobedience, punishments must be given

depending on how severe it is.

C. Attendance - this policy shows how attendance is necessary for both the employees

in Burrito Koreano.

 Absence and tardiness will be recorded.

 Employees must submit a medical certificate if they were absent for a number of

consecutive days within reason.

D. Compensation - this policy indicates that employees’ compensation should be

given at the right period of time and the right amount.
