Before you choose a training company, select the correct Level of training for your food-handlers as listed
below. Most catering staff will need Level 2 training certificates.
The revised Saudi Aramco Environmental Health Code SAEHC-S-04 Food Service Establishments applies
to contractor camps where there is a central kitchen/diner or where food is cooked and supplied to another
camp/workplace. It requires food handlers at all levels to be properly trained in food hygiene so that they
can carry out their work in a safe manner. Training should be carried out by accredited trainers/company
to a recognized international standard.
Once workers have received this accredited training, then an in-house sanitation program should be
developed to maintain that knowledge; this can be delivered by trainers who have achieved minimum Level
3 training.
Failure to train kitchen staff to the recognized level may result in suspension of catering operations.
External food hygiene training for staff should be internationally recognized such as the UK’s HABC
certificate level of training in food hygiene or by other internationally recognized food safety training bodies.
A number of food hygiene trainers are available in-kingdom. Please make your own inquiries and select the
training company which best suits your requirements. These providers are accredited to provide training to
standards of the Highfield Awarding Body for Compliance (HABC) or the Royal Institute of Public
Health (RIPH).
Please contact Saudi Aramco’s Community Services Department and/or Environmental Protection
Department if you identify any other local provider which meets a similar accredited standard. Please check
with EPD or CS Safety Compliance Group before booking any workers onto courses other than those
providers below.
Note that students have to pass a written exam and the pass rate can vary from 50-80%. Some of the
training providers allow free retraining and to re-sit exams. Check with them regarding this.

Chartered Institute of Environmental Health, UK and the National Registry of Food Safety Professionals,
USA.
