Spinach & Cheese Puff Regina Wickline

Spinach is dressed up for the holiday table in this creamy,


cheesy dish. It takes just a few minutes to put together.

3 10-oz. pkgs. frozen chopped 1-1/2 c. shredded Swiss cheese,


spinach, thawed and divided
squeezed dry 2 t. salt
1-1/2 c. half-and-half 1/8 t. pepper
3 eggs, beaten 1/4 t. nutmeg

In a large bowl, combine spinach, half-and-half, eggs, one cup cheese


and seasonings; stir to combine. Spread mixture evenly in a lightly
greased shallow 2-quart casserole dish. Top with remaining cheese.
Bake, uncovered, at 350 degrees for 30 to 35 minutes, until set and
golden on top. Makes 8 servings.

Younger guests will feel so grown-up when served bubbly


sparkling cider or ginger ale in long-stemmed plastic glasses.
Decorate with curling ribbon just for fun.
