Fried Chicken Nuggets

If your family loves crispy chicken nuggets, this recipe is for you.

1 c. whole-wheat flour
¼ c. milled flax seed
2 t. dried, minced onion 1 t. garlic powder
4 boneless, skinless chicken breasts, cubed ¼ c. extra-virgin olive oil In a one-
gallon plastic zipping bag, combine flour, flax seed, onion and garlic
powder; mix well. Place chicken cubes in bag; seal and shake bag to coat.
Heat oil in a skillet over medium heat. Add chicken; cook for about 8
minutes on each side, or until juices run clear. Drain on paper towels. Serves
6.
