Why is the food from a foreign country never the same as from the

native country?

My father in law used to live in India. He was responsible for a forestry


project in one of the pooret parts of the country but come christmas ha
decided he wanted a typical swedish christmas dinner.

He had to make it himself.

The ham that is the central part proved impossible but he got hold of a
lamb leg and cooked that in the manner of a swedish christmas ham. He
could not fins any herring to pickle but substituted it fore som indian
ocean fish that had a fain resemble of herring. The same with red
cabbar, he found amaranth. Okra hade to play the role of brussel
sprouts. And so on. And in the end he hade something that with a little
stretching of credulity could pass as a 2swedish” “christmas” dinner.

And thats how new food is created.

German cooking met mexican and merged into Texmex. Lebanese


kebab turned into taco al pastor. And so on.
