• 3 + ½ cups plain flour , plus extra for dusting • 4 tablespoons sugar • 1 pinch salt • 200 g unsalted butter , chilled and cut into cubes • 1 large egg • 80 ml icing water
FOR THE FILLING
• 5 apples , peeled, cored and halved, diced • 1 lemon , juice and zest of • 1 cup sugar • 2 tablespoons cinnamon powder • 1/2 teaspoon ginger powder • 1/4 teaspoon clove powder • 1/4 teaspoon nutmeg powder • 2 tablespoons corn starch
• vanilla ice cream , optional, to serve
DIRECTIONS
1) Pre-heat the oven to 220 degrees Celsius.
2) First mix the flour with the sugar and the salt in a big bowl. 3) Second, use your fingertips to gently work the cubes of butter into the flour and sugar until the mixture looks like breadcrumbs. 4) Add the egg and pour the water to the main mixture and gently work it together until you have a ball of pastry dough. 5) Don’t work it too much at this stage – you want to keep it crumbly and short. Cut the dough in half, then wrap it in film and put it into the fridge to rest for 30 minutes to 1 hour. 6) Meanwhile, peel your apples. Cut them into small parts. 7) Put them into a large bowl with the zest and juice of one lemon, the sugar and the spices. Mix the corn starch to the filling, then put aside. 8) Roll each half of dough into a disc. Lay it on the baking tray. Put the apple filling in the pan. Place the second disc of dough over the top. Press the edges together to form a seal. 9) Brush the surface of the dough with egg and then sprinkle with sugar. Pierce the top of the dough in several places. Bake the pie for 40 minutes.
