Principles of Food Preservation
A good method of food preservation is the one that slows down the agent that cause
spoilage. Also, during the process of food preservation, the food should not be
damaged.
Removal of micro-organisms or inactivating them. This is done by removing air,
water (moisture), lowering or increasing temperature, increasing the concentration of
salt or sugar or acid in foods. If you want to preserve green leafy vegetables, you have
to remove the water from the leaves so that microorganisms cannot survive. You do
this by drying the green leaves till all the moisture evaporates.
Removal of insects and worms. By storing foods in dry, airtight containers the insects or
worms are prevented from destroying it.
Planning a Project for Food Preservation
Careful and systematic planning is the first step in making a good food preservation
project. Plan what to preserve, ingredients, materials/tools needed, and how to do the
preservation properly.
Parts of a Project Plan
I. Name of Project - The project to be done.
II. Objectives - The reason for making the project .
III. Materials - The list of materials and their description.
IV. Design or Drawing of the Project - An illustration of the project to be done.
V. Procedure - Steps in making the project accompanied by illustration for
clarity and understanding.
VI. Evaluation - Check the quality of the finished product. A scorecard or a rubric
is used for evaluating the project. It consists of a set of criteria with questions to be
answered by the students, the teacher, and the parents.
Pineapple Jam Ingredients:
2 cups chopped pineapple 2 cups refined sugar
Procedure:
Cook 2 cups chopped pineapple and 2 cups sugar until slightly thick.
Put in sterilized jar.
Note: You can use mango using the same measurements
Tocino Ingredients:
kilo sliced pork or chicken. 1 cup sugar
tbsps salt
Procedure:
Wash pork.
Sprinkle sugar and salt
Mash thoroughly until the sugar and salt dissolve.
Pack and refrigerate.
Market trends and demands in preserved or processed food
A survey is being done to know who or what the choice of the people is. It is the same way for
determining market trends or demands. A survey is conducted to know what the people feel, what
they want etc. Based on the results of the survey, you will know the preference of the market. The
product that will produce is based on the choice of the market.
Survey is a data collection tool for research. Research will entail an extensive discussion. A way of
collecting data through asking people, interviews, questionnaires, focus group discussions and
forums. Participants/respondents, number and characteristics are the following needs to be identified
when conducting a survey.
Benefits of using a survey tool
A survey is a method of gathering information from a sample of people.
Surveys provide a critical source of data among a sample of respondent to know the trend of
what they like or what they want. This would help you plan a strategy on what product to sell
knowing that it is in demand and could be a source of income.
Before starting a survey, you may ask yourself:
Why am I conducting the survey?
What do I want to know?
What question needs to be answered?
How to create a survey tool?
1. Define your goal. What exactly are you trying to find out?
2. Identify your respondents. Who are you going to ask? Is it students, mothers or
your neighbors? This will help you identify your target customers in the future.
3. Design your survey. Most surveys are in multiple choice question or the
respondents will have to select from a given samples. This way you are getting the exact
data you will need.
4. Avoid asking personal questions you will not need. Your target is to get the
respondent’s opinion.
Analyze your survey result
After taking the answers of your respondents you can now analyze what product could
be profitable in starting your business.
