This project is largely internet-based. Instructor will play videos using classroom

computer and AV display methods as available. Alternatively, students may have to

gather around available classroom computers to view content.

Students will also use the internet to search websites using links provided by the

instructor. They will be allowed to google specific information, such as “nutritional

content of chicken thighs”. They will also be given sets of nutritional charts,

infographics, etc. They will use google docs and forms provided by the instructor to fill

out the menu plans, etc.

After Proposal Period

The project will be continued for a few days, to plan and submit their recipes and

meal plans to put together a cookbook. There are a number of websites that schools

use to publish cookbooks for fundraisers. They are all very expensive, so the PTA will

be enlisted to fund the project and select an online publisher.

Innovation

I don’t know how innovative this project is, per se. I want my students to

develop empathy for poor families by understanding the scope of the problem, and

realizing just how challenging it is to be poor. Folks living near or below the poverty line

have to make hard choices and compromises continually. Planning meals that are

balanced and cheap is no easy task. I want my students to develop the necessary

resourcefulness and flexibility that this entails. I also want them to learn that good food

does not have to cost a lot of money, but it takes planning, and buying what’s on special

at the budget grocery stores. I especially want them to understand how costly it is to



eat fast food and pre-packaged food items, compared to cooking whole foods from

scratch.
