SOTO BETAWI

(Hasil jadi: 6 porsi)

Main Ingredients

 Beef Shank 350 gram


 Water 2 liter
 Thick Coconut Milk 200 cc

Seasoning

 Cinnamon 5 cm
 Bay leave 4 gram
 Lime leaves 5 gram
 lemongrass 10 cm
 Galangal 1 cm
 Clove 6 gram
 Salt 15 gram

Grounded spices

 Garlic 50 gram
 Candlenut 3 butir
 Turmeric 3 cm
 Pepper 3 gram
 Ginger 3 cm

Complementary

 Fried Potatoes 2
 Lime 1
 Tomatoes 1
 Leek 10 cm
 Fried onions 10 gram
 Emping 100 gram
 Sambal
Making the Betawi Soup

1. Briefly boil a beef and offal in cold water until the dirt out. Then dispose the dirty
water and change with new cold water.
2. Cut into 2x2x1 cm and put back into the pan, add water 1 liter.
3. Sauté fine spices, cloves, bay leaves, lemongrass, galangal and cinnamon.
4. Add sautéed seasoning and tripe in a meat stew pan.
5. Add sugar, salt, and pepper to taste. Add coconut milk, milk and cook while

6. Arrange potatoes, tomatoes in a bowl, flush with soup. Place the chives on top.

7. Serve with: white rice, lime, emping and sambal.
BIR PLETOK

Ingredients
- Water 1500 cc
- Secang 10 gram
- Pandanus leaves 5 pieces
- Ginger 125 gram
- lemongrass 15 cm
- Clove 1 gram
- Cinnamon 4 gram
- Nutmeg 1 gram
- Lime leaves 5 pieces
- Sugar 200 gram

Making Bir Pletok

1. Add the water in the pan with pandanus leaves, ginger, lemongrass, cloves, cinnamon,
nutmeg, secang wood, orange leaves and market sugar. Cook until boiling.

2. Simmering for 30 minutes

3. Strain the drink and dispose of the pulp. Serve drinks in a glass in hot or cold conditions.
NAGASARI
(Hasil jadi 25 buah)

Ingredients
- rice flour 450 gram
- Tapioca 150 gram
- Thick Coconut Milk 1200 cc
- Banana 5 pieces
- Sugar 200 gram
- Salt 5 gram
- Banana leaves 25 pieces

making Nagasari

1. Dissolve rice flour with 500 cc of coconut milk and dissolve tapioca with 200 cc of coconut milk

2. Heat the remaining 500 cc coconut milk with sugar, salt and pandanus leaves until boiling.

3. Add the rice flour solution in the coconut milk stew while stirring until boiling.

4. Pour the tapioca gradually into the rice flour mixture while stirring evenly.

5. Take a banana leaf, place the banana slices in the middle, cover again with the mixture.

6. Fold the left and right parts of the leaves, and then fold the remaining leaves down.

7. Steam for 15 minutes and ready to serve.
