Chicken-Apple Sausage Patties

Servings: 4 to 5
Preparation Time: 10 Minutes
Cooking Time: 15 minutes

Ingredients:
1 ½ kilos Ground chicken meat
3 pieces (medium size) Apples (peeled, seeded and grated)
1 cup Minced onions
½ cup Minced Celery
½ cup Minced Parsley
1 Tbsp All-purpose flour
5 Tbsps Brown sugar
1 Tbsp Salt
1 Tbsp Pepper
1 bunch Red Grapes (washed)
2 Tbsps. Olive oil (plus more for frying)
Romaine Lettuce (for plating)

Procedures:
1. Combine all ingredients except for grapes and olive oil, in a medium bowl. Mix well
using your hands. Pan-fry a small portion of the mixture to check the seasoning of patties.
Adjust if necessary.
2. Shape remaining mixture into thick patties each 3 inches in diameter. Heat oil in a frying
pan over medium heat. Pan-fry patties until cooked through and golden on both sides. Set
patties aside.
3. Toss red grapes in olive oil. Cook in a non-stick pan over medium heat until grapes are
warm and skin slightly crack or wrinkle. Alternatively, you may also arrange the grapes
on a baking sheet and bake in an oven at 350 degrees F for 10 minutes.
4. Serve sausage patties with cooked grapes and its juices on the side
Cheesy Bacon Croquettes
Servings: 4
Preparation Time: 25 to 30 minutes
Cooking Time: 20 minutes
Ingredients:
1 kilo Potatoes (peeled and cubed)
1 tsp Salt
5 cups Water
2 Tbsps Minced garlic
3 Tbsps Chopped parsley
¼ cup Butter
Salt and pepper

For the croquettes:


200 grams Bacon (chopped)
250 grams Lean ground pork
3 Tbsps Finely chopped onions
2 cups Japanese Breadcrumbs
1 cup All-purpose flour
3 pieces (medium) Eggs (beaten)
1 bar Cheese (cut into strips)
1 Liter Oil for frying

Procedure:
1. In a saucepan, boil the potatoes with salt and water until fork-tender. Drain.
2. Transfer potatoes to a bowl then mash until smooth.
3. In a bowl, combine garlic, parsley and butter (melted). Add the mashed potatoes and mix
well. Season with some salt and pepper. Set aside.
4. In a skillet, cook the bacon until fat is rendered and bacon is crisp and brown. Drain on
paper towels. In the same pan, remove most of the bacon fat leaving just a tablespoon.
Sauté the onions then add the ground pork. Stir in the bacon. Season with some pepper.
5. TO form the croquettes. Place 2 tablespoons of mashed potatoes on the palm and shape
into an oval. At the center put some of the meat filling and a strip of cheese. Top with
another 2 tablespoons of mashed potatoes. Seal the edges to enclose the filling. Shape
into oval.
6. Dredge in flour, then place on a tray dusted with more flour. Shape all the mashed
potatoes and arrange on the tray. Freeze for 20 minutes.
7. Coat croquettes with flour then dip in a beaten eggs. Cover completely with breadcrumbs.
Chill for 10 minutes or overnight.
8. Heat oil for frying then cook croquettes until golden brown in color.
Blueberry Oatmeal Greek Yogurt Muffin
Yields: 1 dozen
Ingredients:
1 cup + 1 Tbsp All-purpose flour, divided
1 cup Rolled oats
2 Tbsp Baking powder
¼ tsp Salt
2 large Eggs (lightly beaten)
1 cup Plain Greek yogurt
1/3 cup Honey
¼ cup Milk
2 tsp Vanilla extract
1 cup Blueberries (frozen or fresh)

Directions:
1. Preheat oven to 350 degrees F and either grease a muffin pan or line with 12 silicone
liners.
2. Combine 1 cup flour, oats, baking powder and salt in a large bowl.
3. In a medium bowl, whisk together the eggs, yogurt, honey, milk and vanilla until well
combined.
4. Stir the wet ingredients into the dry ingredients until combined.
5. Toss the blueberries in the remaining flour and then carefully fold them into the batter.
6. Divide the batter evenly among the muffin cups, filling to the top.
7. Bake for 18-20 minutes, or until the tops are firm and just starting to golden brown. A
toothpick should come out clean.
8. Allow the muffins to cool completely in pan before transferring them to a storage
container or eating.
Apple Oatmeal Greek Yogurt Muffins

1 cup + 1 Tbsp All-purpose flour, Divided
1 cup Rolled oats
2 Tbsps Baking powder
1 Tsp Ground Cinnamon
¼ Tsp Salt

1 cup Plain greek yogurt
1/3 cup Honey
¼ cup Milk
2 tsp Vanilla extract
