1. Explain how bread dough rises after adding baker’s yeast.
Yeast organisms eats sugars in the flour, and then releases carbon dioxide. The carbon
dioxide that formed made the bread dough rises. During baking, the carbon dioxide
expands which causes the bread to rise further.

2. Using the balanced equation for the fermentation reaction, calculate for the theoretical
amount of alcohol to be produced using 10 grams of sucrose. (Density of ethanol is 0.79
g/mL).

4. Give two applications of fractional distillation.

1. It is used for the purification of water as well as separating acetone and water

2. It is also used in several industries for purification and separation of many organic
compounds in oil refineries and chemical plants.

5. Explain the principle behind vacuum distillation.

It is like a normal distillation that permits either separation or purification of compounds,


however this time vacuum distillation works through enabling the compounds to boil at lower
temperature than normal when pressure is reduced. It is used when boiling point of
compound is too high but has to be distilled without significant thermal decomposition.
