PRE-PREPARATION
SOP -1    1. Wash your hands prior to beginning food preparation.
SOP -2    2. Clean and wash Pork spareribs, ginger, scallion, and garlic then rinsed under running
water prior to being seasoned with a dry rub or marinade, after which it's cooked or frozen.

PREPARATION

4. Mix the sugar, Bean sauce, Apple sauce, soy sauce, ginger, scallion and salt in a bowl.
5. Rub both sides of the pork spareribs with the sugar mixture.
6. Place the spareribs in a 9x13-inch baking pan; cover and refrigerate overnight.

                4. First, the ribs are smoked at a low temperature for 3 hours.

                6.Finally, they're brushed with a sauce or glaze and grilled for 1 more hour.          

CCP -1   7. Preheat an oven to 250 degrees F (120 degrees C). Whisk together the rice wine, garlic, honey,
Hoison sauce, and mustard in a bowl. Set aside.
8. Tear off 2 large sheets of heavy duty aluminum foil and lay them shiny-side down. Place a rack
of spareribs on each sheet, meaty-side up. 

SERVICE 
CCP -2    9.. Bake in the preheated oven until the ribs are very tender, 3 hours and 30 minutes to 4 hours.
Carefully open each packet, and drain the drippings into a saucepan. You may only need the drippings
from one packet.
10. Set ribs aside. Simmer the drippings over medium-high heat until the sauce begins to thicken,
about 5 minutes. Brush the thickened sauce over the ribs.
                  
STORAGE
CCP -3    11. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
12. Place the ribs back into the oven and broil until the sauce is lightly caramelized, 5 to 7
minutes.
