A. Purpose: This guide is to be used only as a reference in the event shelving space is limited. Do not alter shelving if it is not necessary to your store.
B. Shelving Heights: Shelf Item Specifications
- Store seafood on shelf above beef & pork shelves. - Clearance between shelves not including thickness of shelf Seafood itself measures 12 ½ inches. - See notes for important information
- Store Beef & Pork on shelf above chicken shelves.
- Clearance between shelves not including thickness of shelf Beef & Pork itself measures 12 ½ inches.
- Store poultry/chicken on bottom shelf always.
- Shelf must be a minimum of 6 inches off floors and away Chicken from walls to promote proper air flow and allow for good (Bottom Shelf) sanitation - Clearance between shelves not including thickness of shelf itself measures 13 ½ inches. Notes: If multiple shelves are being used for the same item use the same clearance for every additional shelf. If you are stacking cambros above one another please adjust the clearance height to save vertical space. Seafood can be shelved together with beef & pork. Shelves adjust at 1 inch increments. In the event new items are introduced into the menu, use your own best judgment to increase shelving heights to save vertical space. You do NOT need to have a specific shelf for Chicken, Beef & Pork and Seafood if it is not necessary to your store.
