4 cloves garlic, finely chopped; 1 sprig fresh thyme; 2 onions,
sliced; 4 scallions, chopped; 1 cup sliced assorted bell peppers
(red, green, yellow, orange); 1/4 Scotch bonnet pepper, finely
chopped with seeds removed; 1 (20-ounce) can ackee, drained;
1 teaspoon freshly ground black pepper;1 teaspoon paprika

TIME ORDER OF WORK – METHOD/OVEN MANAGEMENT

8:00 – 8:30 General preparation time. Collect utensils and equipment. Wash and dry.
Set up work area. Mix all the ingredients for the dumplings and form a
dough. Once the dough is formed, cover and let it rest for one hour. Wash
off all the salt from the salted cod fish in cold water, and then soak for 1
hour in hot water, and then drain and replace with a new batch of hot water
for another hour. Wipe and season liver. Live to marinate.

8:30 – 9:00 For the salad: Combine the fruit and nuts in a large mixing bowl. Whisk
the honey, lime juice, and lime zest in a small bowl and pour the dressing
over the fruit gently tossing until all of the fruit is evenly coated. Transfer
the fruit into the hollowed pineapple shells and refrigerate. Wash up and
tidy work area.

9:00 – 9:30 For the Braised liver: Add oil to a sauté pan and heat over high flame; add
liver and sauté for about 3-5 minutes. Add onions, thyme, tomato ketchup
and water, stir, cover and allow to cook for another 3 minutes. Wash up
and tidy work area.
For The Ackee and Saltfish: Heat the oil in a medium skillet over medium
heat and then add the chopped garlic and cook for 30 seconds. Add the
sprig of thyme and cook for 30 seconds. Add the onions, scallions, bell
peppers, and Scotch bonnet pepper and cook for 5 minutes. Stir the entire
mix as needed. Add the prepared codfish to the skillet and simmer for 5
minutes, stirring as needed. Add the ackee to the skillet and simmer for
another 2 minutes. Stir in the black pepper and turn off the stove. Garnish
the cooked meal with the paprika. Wash up and tidy work area.

9:30 – 10:00 For the fried dumplings: Cut the dough into six pieces and formed each
piece into a ball. Add the balls to the heated oil and let then fry. Drain
them on a paper towel. Wash up and tidy work area

10:00 – 10:30 For the Hot Chocolate: Place the milk in a saucepan over medium-low
heat. Whisk in cocoa powder and sugar, and heat until warm. Once the
milk is warm, add chocolate chips, whisking until they melt into the milk.
Add a splash of vanilla extract.
For the banana milk shake: Put the milk, vanilla ice cream and banana into
a blender. Whizz everything up until smooth then pour into a tall glass.
Top with a big spoonful of whipped cream and decorate with a pinch of
cinnamon, some banana chips and a cherry.
