PASTA SALAD ❖ 1/2 Cup macaroni
❖ ¼ Chopped onion
❖ 1/4 cup Mayonnaise
❖ 2 Tbsp Peas and Carrots
❖ 1 Celery Stalks
❖ 1 Bell Peppers
❖ 2 Tbsp Raisins
❖ 1/2 Tsp Mustard

ORDER OF WORK – METHOD/OVEN MANAGEMENT
TIME
9:00AM Place a pot of water to boil for Macaroni. Then put macaroni into boiling
-9:15AM water until tender.Clean, rinse, slice some skin from cucumber then chop
cucumbers into four pieces and scoop out the inside and set aside.
9:30AM Chop onions, bell peppers, and pimento finely, grate carrots finely and
-9:45AM then strain Macaroni set aside to cool. Open corn and peas and carrot,
mayonnaise, tuna and place in separate bowls .
9:AM Combine Tuna, sugar,salt, black pepper, cayenne pepper, onion, celery,
-10:00AM and mayonnaise and mix well. Add macaroni, pimentos, red onions,
mayonnaise ,celery,corn,peas and carrots,bell peppers, sugar,raisins and
finely grated carrots to a bowl, mix well and add salt and pepper to taste.
Stir well and place in the refrigerator until needed.
Put garlic,mayonnaise ,lime juice, mustard and black pepper into a
10:15AM blender then place in the refrigerator until ready for use.

Remove tuna mix from refrigerator and place into cucumber wells and
10:45AM garnish with tomato and bell peppers. Place garlic sauce into a container.
11AM
Plate cucumber wells and pasta salad with a drizzle of garlic sauce for
dressing.
