RAW MANGO SALAD


A VERSION OF THE WELL LOVED THAI SALAD

IngRedIentS
1 Raw Mango – peeled and grated
Raw Papaya grated – the same quantity as the raw mango
1 Carrot – grated

1 Red Onion – sliced thinly
1 Green Chilli – deseeded and chopped coarsely
ablespoons fresh orian er lea es choppe
1 Teaspoon Garlic paste
1 Teaspoon Galangal paste
Small istful of fresh Basil ea es an int ea es kept hole
arge istful of plain roaste Peanuts
2 Tablespoons Jaggery
4 Teaspoons Soya sauce
1 Teaspoon Red Chilli Powder
½ Teaspoon Cumin Powder
3 Teaspoons Tamarind Paste
½ Teaspoon Vinegar
Salt to Taste

Method
ook the tamarin paste an aggery together on a lo flame till they combine ell an
remo e from heat ool the mi ture mi in all the ingre ients together et it sit for at
least 15 minutes before eating.

ALOE VERA COOLER


A MIRACLE DRINK ON A HOT SUMMER DAY

IngRedIentS
thick long lea es of loe era cut freshly from the plant
50 grams sugar
200 ml Sweet lime Juice

Method
s soon as the lea es are cut from the plant they ill oo e a greenish bro n sap ea e
the leaves at an angled position to let this sap drip out completely. It takes somewhere
between 30 – 45 minutes in the process. Then wash the leaves. Slice away the thorny
sides. Peel away the green skin and you will be left with the transparent jelly like sub
stance. Wash it in different water, 7 times. Cut it into small pieces. Take care as the pulp
is e tremely slippery Put the pieces of loe era along ith the sugar an cook on a
me ium flame stirring fre uently for about minutes the fruit uice after the
solution cools o n ater to taste if re uire before ser ing

MALAI TOAST
CREAMY VEGETABLES ON CRISPY TOAST

INgReDIeNts
Bread Slices
3 small onions, chopped
3 small tomatoes, chopped
1 capsicum, chopped
1 tablespoon garlic paste
1 teaspoon chilli powder
2 teaspoons oregano
3 tablespoons butter
2 tablespoons fresh cream
3 tablespoons semolina
Salt to taste
Buttermilk or quick buttermilk
Ghee for greasing the baking tray

MethoD
Mix together all ingredients except buttermilk and bread. Let the
mi ture rest for half hour Place the brea slices on a baking tray
greased with Ghee. Spoon 2-3 teaspoons of buttermilk on top of
each slice evenly. Spoon the mixture on to the bread slices. Bake in
a hot oven till the base browns. Serve with Tamarind chutney and
Green chutney.
